Tonight for dinner I made chimichangas. It was a new recipe and I think I will change a few things if I make it again. The main thing I would change is that we thought it would be much better with chicken. It also made alot, at least a lot for our family.
I also made mexican rice. I really like the mexican rice from a restraunt near us. I have been looking for awhile for a recipe that would turn out similiar. I could never get the texture to turn out right. Well, I finally found a recipe that came very, very close to it. I do leave out the onions and I add a little taco seasoning to it, maybe a teaspoon. We like it with a little more flavor so adding the taco seasoning really helps. Cooking the rice in the oil before adding the liquid it what I think gives it the right texture.

I love chimichangas! I don’t make them often because they involve deep-frying. But now that I see your recipe, I’m going to try making them in the oven. Sounds much easier!
