Today I made sourdough bread. I have several recipes I make with sourdough. This is the easiest recipe I have found, it comes from Bob’s Red Mill. I started my own starter using the recipe from King Arthur Flour. We really like it. Sorry I did not get a picture.
Bob’s Red Mill Sourdough Bread
1 1/2 cups sourdough starter
1 cup lukewarm water
2 teaspoons salt
1 teaspoon active dry yeast
4 cups all purpose flour
Stir the starter with water, yeast, salt, and one cup of flour. Combine to make a thick dough. Add additional flour 1/2 cup at a time until dough comes together. Turn onto floured surface and knead until smooth and elastic about 8 minutes. ( I make mine in my kitchen aid mixer) You may not need to use all the flour.
Place in a greased bowl. Cover and allow to rise until it doubles in size about 2 hours.
Place dough on floured surface. Knead about 30 seconds. Let rest about 5 minutes. Shape dough into a round or long loaf. Place on cookie sheet. Cover with dishtowel and let rise until doubles about 1 hour.
Preheat oven to 425 degrees. Using sharp knife cut 2 or 3 slashes across the top of the loaf. About 5 minutes before baking place a pan of water on the bottom shelf of the oven. This gives the loaf a crispy crust. ( I do not always do this) Bake for about 20 minutes or until golden brown and has a hollow sound when tapped.
