Meal Planning Monday

I am still trying to recover from vacation and company. But I think I have this week’s menu figured out.

We are now getting a lot from the garden. We have quite a few cucumbers, tomatoes, and melons. Plus some carrots, zucchini, and onions. I am going to try to incorporate as much as those as possible into the meals this week.


Baked French Toast and bacon (both from the freezer)


yogurt and muffins or bread

eggs and toast

overnight waffles (new recipe)






pesto, bread, and melon

gazpacho and bushetta

pinto beans and bread

Indonesian Chicken with rice

hamburgers and french fries and vegetables


homemade refried beans, rice, chips and home made salsa


zucchini bread

zucchini cake

  3. Someday I’m really going to have to try and make my own pizza crust – I’ve always been intimidated by it but I really want to be able to.
