We love this soup. It is quick and easy to put together. I know a lot of people make taco soup with beef. I like this recipe because it changes things up a little and uses chicken. I found a chicken taco soup recipe on allrecipes and changed a few things to adjust it to our tastes. I usually make this in the crock pot but you do not have to. I have used this soup recipe many times when I take a meal to a family in need. They can either use their crockpot or if it is someone I know well, I just take it in my crockpot and they return it or it can be heated up on the stove. It makes a good meal to take to someone because it is a one dish meal. I usually send it with chips and a dessert but you do not have to. The soup would be fine on its own. This recipe also freezes well, so you can make it ahead of time, freeze it, and bring it back out when you need a meal.
Chicken Taco Soup
- 1 (16ounce) can chili beans
- 1 (15 ounce) can black beans (rinsed and drained)
- 1 (15 ounce) can corn (drained)
- 1 (8 ounce) can tomato sauce
- 1 1/2 cups chicken broth
- 2 (10 ounce cans) rotel tomatoes
- 1 pkg taco seasoning
- 3-4 cups cooked chicken cut up
Place all ingredients in a crock pot for 3-4 hours on low. Serve with cheese and sour cream.
