Whole Wheat Muffins

I wanted to do a healthy recipe today to show you that I have not given up on trying to eat healthier. I decided to join in on Nourishing Gourmet’s portable healthy food challenge. These are healthy and they work great for lunches.

I really have been cooking healthier, especially for our main meals, even though my recipes and posts have not shown it. I am really working on breakfast and lunch. It has been slow going and I have not had many interesting things to post for healthy ideas. I have been using more whole grains and experimenting with them. Experimenting is the key word. Cooking with whole grains seems to be a lot of experimenting. Some things work and some things don’t!

If you read my blog regularly, you will see that we still have a long way to go. I have not given up baking desserts. This is one area I am doing poorly in. I just love to cook and bake to much to go healthy on them. Whole wheat in desserts just does not work the same. I do post a lot of desserts but we really do not eat all of it. I send quite a bit of the items to work with my husband. His staff loves to have cookies sent to the office.

So, that is a healthy eating update that is not very exciting. I have found a whole wheat muffin recipe that we really like, so I decided to share it today.

I like to use raspberries or blueberries in it. The recipe says to let the batter sit for an hour. I find it works best to sit overnight. It helps soften the whole wheat and it gives the muffins a better texture. I wish I could claim that I came up with this recipe on my own, but I can’t. This recipe came from King Arthur Flour Whole Grain Baking Cookbook. I love King Arthur Flour recipes, they work really well.

    I’ll have to try your whole wheat muffin recipe. I’ve been doing various whole wheat muffins by adapting my old recipes, but as you say, it doesn’t always turn out as great as I would like!

    I wouldn’t feel too bad about dessert recipes. My personal feeling is that when we’re eating well most of the time, our fearfully and wonderfully made bodies are very capable of handling a dessert of refined flour and sugar. There’s nothing wrong with taking advantage of that! Moderation is the key. :) My husband and I eat a mostly whole food and heavily raw diet, so we feel free to enjoy the occasional treat. (And I, too, look like we eat tons of junk food because dessert recipes are more fun to post on the blog than the latest variation of vegetable soup!)

    I will have to try this recipe. I use Sucanat or honey in all my baking and I am sure it would work here.

    I have great fondness of muffins, so this is right up my alley. I think that they make wonderful additions to packed lunches (or just even a quick snack to grab on the way out the door on an errand). I agree that letting things sit overnight improves the texture.   4. I have trouble finding white whole wheat flour in my supermarket. Is unbleached all-purpose any better than regular all-purpose? I have also been trying to cook with whole wheat flour, and I am having a difficult time with it. Thanks for posting this recipe. I really enjoy your blog.

  5. I like white whole wheat in things like muffins. You could replace it with regular whole wheat or whole wheat pastry. I find mine at the health food store or in the health food section of the grocery store. I use unbleached four because I don’t like the whole idea of the bleaching process. I am sure you can google search it and find better info than I can give on that. That is what the recipe said to use and that is what I prefer but you could use regular white flour for instead of the unbleached.

    This is unrelated to this post but I just wanted to say; Lynn, sometimes I wish I lived in your house. All I want to do is eat right now and all I *don’t* want to do is prepare food!

    The more effort you put in the better the food turns out so, that’s why I would like to live with you just for a day : ]
