One of the most frugal parts of Thanksgiving is all the leftovers. Turkey is pretty inexpensive right now. So, buy a little extra turkey or a lot extra and enjoy the leftovers. You can make sandwiches, soups, and many other things.
Today I am going to share one of my favorite leftover turkey recipes. I have been making this turkey pie for a long time. It is a great way to use up Thanksgiving leftovers. It is an old Taste of Home recipe. It came from one of their cookbooks from the early 90′s.
We really enjoy this. I hope you do too.
How do you use up your Thanksgiving leftovers?
Turkey Pie
2 unbaked 9 inch pie crusts
1 1/2 cups cold turkey, cut up
1 cup turkey dressing/stuffing
1 1/2 cups turkey gravy (if you do not have enough gravy use some cream mushroom soup)
1 cup celery, cut up ( I leave this out)
2 tablespoons butter
Roll out crust, making two crusts. Place one in a 9 inch pie pan. Combine all ingredients except butter and place into the crust. Dot with butter. Place second crust on top. Seal edges and cut in a few steam vents. Bake at 425 degrees for 30 minutes. Serve and enjoy.
