		<description>Yum. Made a batch of this last night as part of the pantry challenge over at Good Cheap Eats. I used old oatmeal packets of some variety that no one in the house liked and coconut oil instead of vegetable oil.  Two things gone out of the pantry and a good supply of pancake mix on hand!  I did find that this is not a very sweet pancake recipe and since I eat mine plain, I thought I would mention that for anyone else.  After trying some of the first ones off the griddle, I added some more sugar and then had the brilliant idea of adding chocolate chips, which of course is delish!  I have a waffle recipe that I usually just add the maple syrup to the recipe instead of sugar. I might try that next time!</description>
