I need to post some healthy cooking with kids recipes, but for today here is a great cookie recipe. This recipe was one of the first recipes that my oldest daughter learned to make. Now my eight year old is making it. It was also one of the first recipes that I posted on this blog. However no one was reading it back then, so I thought it would be okay to post it again.
This recipe contains a cake mix. I used to keep cake mixes on hand to use for a quick cake or this recipe. But since I have been avoided processed items, I have not bought a cake mix in months. That is until I wanted one to make this recipe. My girls were thrilled that they were once again able to make these. I may have to keep a mix or two on hand just for them.
This recipe is a great cookie recipe for kids to use because it has a cake mix as it’s base. So, it does not have very many ingredients. My girls can make this from start to finish. I usually help my eight year old putting them in and out of the oven, but besides that they make them themselves.
If you don’t have kids to help you make these, it is still a great recipe. They are great cookies to make when you need them quick to take somewhere. In the past I have doubled it and then used 1/2 the batter for peanut butter chips and 1/2 for butterscotch or white chocolate. I like to do this when I take them somewhere, because it looks nice to have two kinds. These cookies are always a hit when I take them to church dinners.
This is actually a pretty frugal dessert to make. You can often find cake mixes on sale and with a coupon they are quite cheap. Even paying full price for the cake mix you can make these cookies for just a few dollars.
Cake Mix Cookies
- 1 chocolate cake mix ( I like Duncan Hines best for this recipe)
- 1/2 cup oil
- 2 eggs
- 1/2 package of peanut butter chips (or butterscotch or white choc.)
Mix cake mix, oil, and eggs together. It will be a stiff batter and takes a few minutes to mix together. Stir in chips. Bake at 350 degrees for 10 – 11 minutes
