Pickled Green Beans

Last week I tried something new.  I have been picking a lot of green beans from our garden.  I was not sure what to do with all of them.  After hearing several people talk about pickled or dilly beans, I decided to give them a try.  I hope we like them because I now have 10 pints.

They are a must-make here every year. My family doesn’t eat a lot of pickles, but dilly beans are an exception.

They are also a great gift idea. My hubby’s friend was thrilled to find them in a gourmet shop a few years ago and when I’ve seen them in the store, they are over $6 a jar. So, if for some reason you don’t love them, pack them up with other goodies and give them as gifts.

My uncle used to make dilly beans all the time. I haven’t had them in years, but I still remember the taste. Yum!

I started making ‘dilly beans’ a few years ago when my 4 100 foot rows of green beans gave an over abundance. I had been making garlic sweet pickles and tried that brine. It is a favorite. We eat the pickled beans like pickles. They stay crunchy even after 3 years!!

I love these! We have been making them for years!! My hubs great Uncle grows enough green beans for me to make at least four batches to last us a whole year. Hubs likes them spicy. I love pickled asparagus best but these come in second
