When I make them my sauce is tomato sauce based and then I “poach” my eggs in the sauce. The eggs are not really poached of course, but I crack them in the sauce, pop on a lid and cook until desired doneness. For me that means the white is set but the yoke is as juicy as possible. Sprinkle with a bit of cheese and then serve on toasted tortillas.

I don’t serve a side dish with this. But you certainly could especially if you were serving it for dinner. Anything mexican type would work. Rice, chips, and salsa, or even something healthier would be great.

I’ll have to try these. I’ve wanted to make Huevos Rancheros for awhile but never have yet. Do you serve anything with this as a side?
