You can't go wrong with ham mixed into homemade mac'n'cheese. My husband may have married me just for homemade mac'n'cheese. Our favorite ham dish is simply white beans with ham. Even the four year old asks for more!

Put the ham bone in your crock pot, add 1/2 pound dry white beans (washed but I never soak or anything like that) and enough water to cover. Cook on high for 4 to 6 hours. Take out the bone, add 2 cups diced ham, salt and pepper to taste and cook another hour. Adjust cooking time to suit your taste--longer cooking breaks down the beans more-- smooth and thick soup vs beans in broth.

I have a few ham recipes that I think are a little different:

When I worked as a cook at a Boy Scout Camp one year, the head cook made BBQ Ham sandwiches -she dumped BBQ sauce on very thinly sliced deli ham and served it on buns - the kids gobbled it up!

Ham & Cheese Toasters:
a ham salad-like mix on english muffins, toasted:

Also

and Ham & Cheese Foil Sandwiches - these have poppy seeds and onions inside, also.

I have made a frittata with ham, broccoli and cheese several times that gets rave reviews from the family. We also use ham in black bean soup and the hubs likes ham salad sandwices, which is like tuna salad, except with ham.

my stepmom calls this mac & jack:

usually she uses deli ham, very very very thinly sliced but any substitution is great and often times when I make it for myself i throw in some procuitto as well:

-1 pound penne, cooked in salted water but very very al dente
-bechemel sauce made with 4tbs butter melted with 6tbs flour, browned and made into a roux, add 4 cups of skim milk that has been heated to just below a simmer. add one cup at a time and incorporate well. salt, pepper and a bit of nutmeg and paprika.

-While you are heating the milk for the sauce and cooking the pasta, caramelize some onions and red bell peppers. salt, pepper, and jalapeno to taste (i generally dont like spicy pasta, but this one is sooo a winner. spice can be mild or strong depending on
preferences).

-combine all above ingredients into a large bowl (check for salt! adding it later doesnt do the trick), add about a pound of ham, a little bit of parm and gruyere cheese (not necessary but i like to), and some julienned basil leaves if you have any. pour into a baking dish (large, i use a lasagna pan or 13x9 cake pan) and top with 8 oz mixture of: gruyere, parm, and white cheddar...heavy on the gruyere...like mostly gruyere.
-bake for 30-40 minutes at 350 and broil for last 2 minutes to brown on top if not already browned

its AMAZING and by using skim milk it really isnt that bad for you (or so i tell myself!!) serve with big salad and there goes a pound of ham!!
