		<description>Never would&#039;ve thought of this - but made for a yummy, easy, healthy side tonight with my tilapia and rice.  I used a can of corn, but frozen peppers - and a little less butter than you called for.  Thanks for the idea!!</description>

		<description>I just found this post, but I did the same thing over Christmas break (I&#039;m in college). Even used my little cast iron skillet!

I used 2 c. of canned corn kernels, 2 T butter, 3/4 c. chopped onion, 1/2 tsp. salt, 1/4 tsp. pepper and 1/2 tsp. cumin. 

My dad liked it and normally he only likes corn on the cob or creamed corn.</description>
