I have never used brown rice in this, so I am not sure. You may be right though it may have to do with adding the tomatoes etc. to it.

My mom used to make something like this with Minute Rice. I've tried to make it healthier with brown rice but the rice never seemed to soften, no matter how much water I kept adding. I figured the acid of the tomato kept it from softening, much like would happen with cooking beans. Do you think for this dish, I'll have to stick with white rice?
I can go back to the drawing board with starting with more water/broth in the first place.

We made this for our family of 6. I use the 1.25 # ground turkey. I took the broth to 4 cups and used 2 cups long grain brown rice. I didn't use the chili powder. My husband thought it smelled awful but was delighted that it tastes ok- much like a rice r roni. Thank for the idea!
