		<description>I work very early in the morning, so I don&#039;t always have time to flip pancakes.  I don&#039;t really care for reheated pancakes, but I like to make huge batches of waffles and freeze them.  I also make a big pot of Irish oatmeal and that will last me (and my husband) a whole week...we add maple syrup, dried fruits, and nuts.  I occasionally make a frittata in the evening and reheat it in the toaster oven for breakfast.</description>

		<description>I too struggle with breakfast and have been trying to prepare ahead a lot lately.  I have done two different recipes with great success.  Wheat-oat waffles and Cheddar and Potato Breakfast Bake.  The waffles were actually better after they had been frozen and then popped into the toaster.  For the breakfast casserole, I cut them into squares and put them in baggies and froze them.  When I want them I heat them up and put them in a whole wheat flour tortilla.  Yummy and quick breakfasts! My blog has the recipes.

		<description>we&#039;ve been doing this too -- making big breakfasts and then freeze them for the week.  My husband loves having muffins, pancakes, waffles and even apple syrup/topping ready to enjoy in the mornings -- and I love being able to sleep in for an extra half hour :)</description>
