Cake Mix Cookies

I know most of my readers eat and love gluten, so I thought I would reassure you all that I am still baking some regular, every day, gluten filled treats.

Most of the baked items I have posted recently have been gluten free, but I do plan on posting regular recipes as I make them.  I have realized that I can handle some levels of cross contamination, so I am still baking and sending treats to my husband’s office. Now, it is probably not as often as it used to be, or as often as his staff would like, but I am sending them. As I make and send them, I will post the recipes.

Last week’s treat was easy, it was an adaption of my cake mix cookies. This recipe is a very easy and basic recipe. It made a perfect cookie for me to send to the office this week, because I did not have a lot of time to spend in the kitchen baking.

I usually use a chocolate cake mix, but this time I used a yellow cake mix and chocolate chips. Although I did not eat any of these, everyone else said they were very good.

I know there are many versions of this recipe. Do you have a version that you make?

do you think they might work with the Betty Crocker GF cake mix?

@SnoWhite, I don’t think I have ever tried lemon. Those would be good. We must think a lot a like when it comes to cooking. I have used a GF cake mix and I have a post planned for next week on how it worked. :)

I was going to bring up the GF cake mixes too! I haven’t tried them, but I’m interested in your opinion!

Cake mix cookies are so easy to mix up! I love to do an orange cake mix with orange flavoring, or a chocolate cake mix with mint flavoring! A mom in my class turned me on to these…they are so versatile!!

I use the same recipe but I like to use melted butter instead of oil…tastes better to me.

Cake mix cookies are a lifesaver when you need to make something in a hurry–yours look great! I’ve tried a few and my favorite are the lemon. I take a lemon cake mix and mix it with 2 eggs, 1/3 cup vegetable oil, 1 tablespoon lemon juice, & the grated zest from 1 lemon, then chill it for an hour. After rolling the dough into balls, I roll them in powdered sugar and bake them at 375 for 7-9 minutes. The powdered sugar kind of gives them that crinkle effect so I call them lemon crinkles. :) Paula Deen’s Chocolate Gooey Butter Cookies ain’t too bad either–probably my second favorite. I bet you could make them with a Betty Crocker chocolate g/f cake mix!

@Veronica M., I love Paula Deen but have not seen her gooey butter cookies. I am going to have to try those now. And I think they might work great with a gf mix. Thanks for tell me about them. And I love the lemon idea, I might try adding lemon extract to a yellow gf mix and see how it works. It would not be as lemony as a lemon mix, but might work.
