Gluten Free Pancakes

It took four months, but I finally have a gluten free pancake that my whole family enjoys.  The texture and taste were very close to what I used to make. I was determined not to give up. I knew I could come up with something that we would enjoy if I kept trying. After failing week after week, it finally worked!

I am so happy because pancakes have been one of the things my family misses most since going gluten free. This morning we finally all enjoyed a gluten free pancake breakfast together.

  1. Well they look spectacular! Looking forward to the recipe. I’m also wondering where did you find those beautiful striped napkins? I love those, they’d blend in with all my Fiestaware dishes.

    • @barb, The napkins are fiestaware brand. I got them to go with my dishes. I found them at macy’s and used a 20% off coupon, but they were still kind of expensive. But I LOVE them. :)

    • @SnoWhite, Well, I did make that blueberry pancake gf and it turned out well. But we eat pancakes at least once a week, so I needed/wanted to find a pancake that would work better for everyday use. The blueberry one is really good, but not the healthiest to serve all the time. The one I made this morning was more of a basic everyday pancake.

  4. These look so great, good job!! We just tried Kamut Khorasan Wheat pancakes a few weeks ago and LOVED them! Have you ever tried these since there are people with gluten intolerances that can handle this wheat bc it is so pure and has not been genetically modified? Maybe this would work for you – I hope :) They sure were good and your recipe looks great too!
