I made this last night for our Valentine's dinner and it was excellent!! My 2 yr old had two full bowls of it! :) My husband was really impressed with it and I'm pleased that it's affordable enough to add to our regular meal rotation. Thanks again for sharing this recipe. I really miss the seafood and fish we had access to growing up. I hope your husband finds work soon. Growing up my father was laid off several times, those times were difficult on us as a family, but the struggles we had drew us closer to each other. Looking back now I would not trade those years for anything. Those times of struggles taught me so much. I hope and pray your husband finds work soon. My husband and I both grew up in Atlantic Canada and love seafood, so my Valentine's "gift" to my husband has been to make a divine seafood chowder for dinner on Valentine's. However, unexpectedly last week, my husband was laid off from his job. Therefore, it didn't look like I was going to be able to make seafood chowder this year, as it's not cheap to make :). However, God heard the desires of my heart and had you post this recipe this week ... for which I have all the ingredients in my pantry all ready!! Thank you for taking the time to post it ... I will be able to pamper my husband because of your recipe choice. (I'm also going to make him, and my boys, your chocolate covered craisins tonight, and I might try chocolate covered raisins too - just for a fun Valentine's treat). Fresh salmon here is at least double the price of any other fish, but canned is very reasonable. Our favourite is a salmon loaf recipe adapted from Allrecipes, it even doubles and freezes well.
