Nacho Cheese Tortilla Chicken Bake

Let me start by saying my kids love this. It is a kid friendly and fun meal. I know it is not the healthiest of dinner choices, but it is a good. Monica recently posted a similar recipe that her family enjoys.

I love to make a meal like this when I am tempted to go out to dinner. This may not be the healthiest meal, but it is healthier and cheaper than eating dinner out.

Serve this with a salad and you have a quick and easy dinner in no time. I like to keep cooked chicken in the freezer just for meals like this. It makes putting this dish together much easier.

I have a similar version of this I make with beef that we also enjoy.

@Tara Rison, I have not posted my homemade cream soup. Mainly because I am still tweaking it to get it like I want it. It works, but I want to improve it. When I get it right, I will be sure to post it, because several others have asked.

This looks AWESOME! Hey, sometimes fast and family friendly trump healthy – a meal can be terribly healthy, but what difference if the kids don’t eat it? Fun needs to happen occasionally!

This reminds me of a recipe I made a couple weeks ago called Chicken and Chip Casserole. If your recipe tastes anything like the one I made than I can’t wait to make it because it is delicious! Mine was one of the best casseroles I’ve eaten in a year! Thanks for your version!
