Ok, this post created a head smack moment for me.

I roast broccoli & green beans. I love cauliflower. It never has occured to me to ROAST the cauliflower. Must. Do. Soon.

We love roasting cauliflower — sometimes, I’ll mash up a bit and then serve the roasted veggies on top! It’s a fun alternative to mashed potatoes.

When roasting veggies, does it matter if the oven rack is high or low?

I make a very similar roasted cauliflower dish and I agree, it is so good this way.
