My husband has been telling me for a while that I should post this recipe. I kept telling him that it is not really a recipe.
I told him that this was so quick and easy that no one would care about how I do this. But every time we ate this he would ask, “Have you posted this?” I finally realized that he thought I should post it because he liked it so much that he thought others would like it too.
So, I finally decided to post my easy guacamole recipe. I will admit that this is not very authentic. I am not sure I should even call it guacamole. So, let’s just call this guacamole like.
And those of you that cook really authentic Mexican food you may want to skip over this recipe.
The main reason this is not authentic is I that I use a bottle of store bought or home canned salsa to make it.
The problem is I refuse to buy tomatoes in the middle of winter. We have a garden full of tomatoes during the summer months. We love having those tomatoes. In fact I make fresh salsa often during the summer, but during the winter I only by canned tomatoes or salsa.
I don’t see the point of buying tomatoes that have very little taste or flavor. Yes, I know you can buy the vine ripened tomatoes, but I still don’t think they are very good.
So, easy guacamole is what we make when tomatoes are not in season.
- 2 avocados peeled and diced
- 1/3 cup salsa, I use home canned, Pace, or whatever jar of salsa that I have in the fridge
- lemon juice and salt to taste
Mash the avocado and add salsa, lemon juice, and salt. Serve with tortilla chips.
