Easy Coconut Cream Pudding

I love this pudding. I have been making this for years.

It is so good. Not only is it good, it is a quick and easy dessert.

You can eat this pudding just like it is, or you can use it to make two pies, by serving it in graham cracker crusts.

We enjoy it both ways, but now I serve it without a crust, so that it is gluten free.

this looks awesome. But (you knew it was coming), could you make it without the cool whip? cool whip is not something we eat, ever. What the heck, I’m making it without the cool whip. I’ll let you know how it turns out.

@karen, It would be heavier without the cool whip, but will work. I would/and have used real whipping cream for it. :) It just doesn’t hold up quite as well with real whipping cream so I would fold it in right before serving. Either way let me know how it turns out.

Omygoodness Lynn that looks divine. I love coconut anything. I popped on to check on you Lynn. I am watching the news and tornados are coming through your area and tearing up everything. I hope you are ok. I was worried and wanted to check on you.

I just tried to make this without any sort of mixer. The cream cheese just wouldn’t go smooth for me. I’m trying to do it in pie form, I hope it works still. Thankfully even if it doesn’t my husband will eat ANYTHING.

Any tips on how to beat the cream cheese better by hand?

@Erica, Did you make sure the cream cheese was really softened first. That would make a difference because it would be hard to beat if it was at all cold. I hope it still tastes good, which it should.
