When I saw this recipe in Paula Deen’s magazine I knew I wanted to try it. I grew up picking and eating strawberries, yet I do not remember ever having a strawberry cobbler. We ate peach, blackberry, and other types of cobbler, but never strawberry.
All I can say is I am so glad I found this recipe. Strawberry cobbler will definitely be a dessert I make again during the spring and summer.
Like most cobblers, this recipe is quick and easy to make. I think it is best served warmed with a little ice cream, but feel free to eat it however you want to.
I did change a couple of things in the recipe, but we love what I came up with. Sorry Paula, I just can’t leave a recipe alone.
Am I the only one that had never heard of strawberry cobbler? Have any of you had it before?
Strawberry Cobbler
- 2 1/2 – 3 lbs strawberries, sliced
- 1/2 cup sugar
- 2 tablespoons cornstarch
- 2 tablespoons water
- 3/4 cup brown sugar
- 3/4 cup quick cooking oats
- 1/2 cup flour ( I used a gf blend and it worked great)
- 1/2 cup butter
- In a saucepan combine strawberries and regular sugar. Let sit for 30 minutes.
- After sitting 30 minutes, cook over medium heat for 5 minutes.
- In a bowl combine cornstarch and water. Stir into berry mixture and bring to a boil.
- Boil 1 minute or until mixture is thickened.
- Spoon mixture into 8×8 or similar pan.
- In a bowl combine brown sugar, oats, and flour.
- Cut in butter to form a crumbly mixture.
- Spread evenly over strawberry mixture.
- Bake at 350 for 25-30.
- Best served warm with ice cream.

I made Strawberry cobbler for the first time last year. My family loves it. I cannot wait to try your Paula recipe. Here is the recipe I use. It is unique because it has a crust. It came from recipezaar.com posted by ratherbeswimmin’ #28619
Fresh Strawberry Cobbler
Serves 8 1 1/2 hours/20 mins prep
1/4 cup butter or margine softened
3/4 cup sugar
1 large egg
1 teaspoon vanilla extract
1 1.4 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup milk
3 cups fresh strawberries, cut in half length-wise
1/4 cup flour
1/4 cup sugar
1/4 cup butter or margine, chilled
beat 1/4 cup softened butter at medium;gradually add 3/4 cup sugar, beat well.
Add egg & vanilla, beat well
Combine flour, baking powder, & salt;add to butter mixture alternately w/milk beginning & ending w/ flour mixture
spoon into 8 inch square dish
arrange strawberries on top, cut side down
Combine flour, sugar, butter w/ pastry blender until crumbly
Sprinkle over strawberries
Bake at 1 hour
Serve w/ ice cream or frozen yogrut

Thanks for sharing this! I purchased a 2 lb. basket of strawberries on sale so I just googled “strawberry cobbler” to see if there was such a thing. Sure enough – I found your recipe with oats (didn’t want a pie crust type cobbler). It’s in the oven now and I can’t wait to try it! I actually made two smaller versions since it’s only me and my husband and I’m freezing one – we’ll see if there’s a taste difference. Thanks again

Wow, I have never heard of strawberry cobbler. I just brought some fresh ones home from the store and I have to try this! I just wonder if I can use Splenda in place of the sugar. Would anyone happen to know??
