Grilled Tomato Pasta

I guess it has been tomato week here. Earlier this week I posted fresh salsa and how I grill tomatoes and today I have a grilled tomato pasta for you.

Summertime meals to me mean simple recipes, using fresh and in season ingredients. This recipe is just that. It is simple yet full of flavor.

MMMM! That really looks amazing. I made grilled tomato soup earlier this summer, and I love how the grilling gives a whole different taste to the tomato.

OMG … that looks so good. I live in an apartment adn I cant have an outdoor grill. However I just bougth one off of QVC to use in my kitchen. I just hope that there is not much of a difference.

Yum Lynn. Tried it today. It was a great lunch! I did grill the tomatoes in butter instead of olive oil though

how can this be done using the oven? do i shish-kabob it?

@shamael, This is how I do the tomatoes, but I think you could do something similar in the oven , they just might have a little different flavor. I also think you could use a grill pan to do the same basic thing. http://www.lynnskitchenadventures.com/2010/07/grilling-tomatoes.html
