This week I roasted two pork roasts. One to have pork roast, roasted poatoes and root veggies, then had Italian green beans. I used the last of the potates/root veggies in with what I call a Mess of Love. Turkey sausage or bacon fried and then potatoes/veggies and then 8 or 12 eggs....depending on how many you are feeding. Tortillas, cheese, pico de gallo or salsa, the combined eggs/potatoes/and meat. Breakfast for an overnight sleep over! I'll have enough roast for lettuce wraps and fried brown rice and to freeze. Pork stew? Pork campout stew? You bet! Let me know if you want these simple recipes.
