Quick Baked Potatoes

I love potatoes, especially baked potatoes, but who has the time to always cooked baked potatoes. I know I don’t.

Baked potatoes take at least an hour and even longer if they are large potatoes. Baked potatoes are not hard at all to cook, but I usually need dinner on the table in a hurry and something that takes over an hour to cook does not often fit into my schedule.

These quick baked potatoes though work great for busy nights. These take much less than an hour. I find that small potatoes can be cooked in about 30-40 minutes like this. That is half the time that baked potatoes usually take.

Not only are they quick and easy, my kids loved them.

  1. We have a microwave/convection oven combo and it is awesome for potatoes! I can make four baked potatoes in 16 minutes and it doesn’t heat up the house. (a really big deal when you live in PHX and it’s still over 100 in Sept)

    • @karen, That would be nice. I am not a big fan of microwaved potatoes because I like crispy skins, but a convection microwave oven combo one would work great. I did not know it would cook them that fast.

  6. This is a great idea! I usually do baked potatoes in the crock pot. Poke holes with a fork, add a couple table spoons of water, put them on at quiet time (just after lunch) & they’re ready for dinner. I like your quick method that doesn’t require my thinking ahead!

  8. Look great! I often set the timer on my oven to have baked potatoes started before I get home from work. But that’s not foolproof as I don’t use my oven timer that often and often forget exactly how to set it!

  10. This is a neat idea! I have a microwave/convection oven combo that I’ve never thought to use for potatoes…I bet this would work great in it.

  11. Great tip! I usually microwave to save time, but I also love the crispy skins and the microwave totally doesn’t do that. I’ve never thought of doing it this way. Looks yummy! Thanks!

  12. The trick with using the microwave is to only partially cook them in it. I nuke the spuds for about 5 mins then, put them on the grill wrapped in foil or in the oven and it shortens the baking time dramatically.
