Baked Oatmeal

My peanut butter baked oatmeal was one of my family’s favorite breakfast recipes. It has been one of the most popular recipes on my main site. We missed it so much I knew I had to try to figure out a new version that would be peanut free.

I recently tried it with soy butter in place of the peanut butter and it worked perfectly. I also added in a few chocolate chips and my kids loved.  I was surprised that this worked so well and I am really excited to be able to fix this family favorite again.

If you are peanut free, but can have other nuts, I think a Nutella or another nut butter type spread would also work well in place of the peanut butter.

If you are gluten free and can have oats and peanuts, you should give the peanut butter baked oatmeal a try with gluten free oats. It works with both quick and regular oats, although we prefer the texture of quick oats.

  1. It is important to make sure the oatmeal is from a source that isn’t cross contaminated. Wheat and oats are most often stored together and share the same equipment. One can be consuming gluten while eating oatmeal and not know it. Bob’s Red Mill and a few other sources have oatmeal they process separately from wheat and is safer for people with celiac disease to eat. It will be labeled as gluten free.

    Hi Lynn, I just subscribed to your feed and am excited to try some of these recipes! One question about this one — is this something that can be made in advance & stored, or is it best eaten straight away?

    • I usually make it and cook it right away, but I often make a large batch and reheat it for breakfast over the next few days. I have had several readers though say that they mix it up the night before and bake it in the morning. So I think either way will work. Thank you for reading and subscribing!

  3. Oh my gosh! I saw this post & thought about it all day. My kids and I had it as a bed time snack to try it. My 3 year old loved the smell, she asked if it were Christmas time while it were baking. I made it & we’ve eaten it over 4 mornings. Just reheat and add milk- yum!

    • I am so glad you like it! I also love to make a large batch and my kids will eat it for several breakfasts. It makes a great make ahead breakfast.

  4. I made the Double Chocolate Oatmeal last night. Left it cooling on the stove and reheated at 200 degrees for 20-25 mins this morning. Score! Great recipe! My boys said it is like a brownie with a little milk on it. Thank you another great oatmeal recipe. I am not sure why I could not find the recipe on your blog. I found it on your weekly menu instead. Thanks again.

    • I am glad they liked it. A brownie with milk on it for breakfast, now that is something any kid would love. :-) I am having a little trouble with my search feature right now, which may be why you could not find it. I am glad you saw it on the menu though.
