No Roll Enchiladas

I posted a tip over on my allergy site for easy no roll enchiladas.

My family loves enchiladas, but does not really like enchilada pies where you layer the ingredients, so these no roll enchiladas are what I came up with. These work great when working with corn tortillas, so this is a tip many of you would use.
