Enchilada Rice

This is one of those simple, get it on the table in less than thirty minutes meals. It is so easy and contains basic ingredients that we all have in our kitchen.

Not only is this Enchilada Rice fast and easy to make, it is kid friendly. It is also a meal all by itself. You can serve this with tortilla chips and salad, but you do not have to.

I love basic dinners like this. We all need recipes like this for those days when we want to feed our family a healthy home cooked meal, but do not have a lot of time to spend in the kitchen.

    Ooooo love this! I think Ill replace the meat with TVP (Bob’s Red Mill brand is gluten free to my knowledge). But it fits the bill for a quick meal I can whip up after work.

    Lynn, I’ve tried this once before and loved it (especially the homemade sauce!!) – I was wondering if you thought this would be an okay meal to do as a freezer meal and just defrost and reheat in oven before serving? Thanks!

    • @Melissa, I think it might freeze okay, but I have had mixed results in general with freezing rice. Some things it really changes the texture and we don’t like it as well, but I think it is worth trying on this recipe. If you try it I would love to hear how it works.

    • @Allison Lawrence, We like black beans in this too and I have been meaning to try it with chicken, but have not yet. I am glad to know that they chicken version works well also. I agree I love the versatility of this recipe. I am so glad that you liked it.

    Both my husband & I are trying to eat healthier. I adapted this recipe for a “Meatless Monday” dinner and it was really good. He loves casserole-style meals and this fit the bill wonderfully. I omitted the ground beef and included a can of (rinsed & drained) black beans and kidney beans (good source of iron, I’ve read) and used reduced fat, 2% Mexican blend cheese and brown rice. It was delicious and he took the leftovers to work for lunch! Thanks so much for an inspirational site and wonderful recipes!

My 7 yr old LOVED it…i made it with kidney beans and jasmine rice and left the corn out since i didn’t have any and it was a success! We ate it with organic corn chips and sour cream. Thanks so much!   7. Thank you so much for this recipe! I had enchilada sauce and thought would this work? So I found you on google.
    I did make it a meat free dish by omitting the beef and adding TVP. I also added RoTel.
    My husband raved about the rice (which usually he isn’t a big fan of rice)

  8. I made this tonight and it was super quick and so delicious! I make rice in huge batches and freeze it in 2-3 cup containers so all I had to do was brown the meat, defrost the rice and viola, the meal took less than 15 minutes from start to finish. I make 18 cups of jasmine rice at a time and warm it in the microwave for 4-5 minutes and it’s ready to go. It works great every time. :-)

  9. We just had this for dinner (slightly changed, ie kidney instead of pinto beans) and from my 7 year old daughter to my 83 year old mother-in-law, we loved it! I even sort of made your enchilada sauce. I had to adapt it somewhat as I could not make it very spicy for the ma-in-law and also we don’t seem to be able to buy chillies in tins, etc here in NZ, so I simply added some sweet chilli sauce. I have been requested to include it on next months menu planner. Thanks Lynn for a great idea.

    Thank you so much for this recipe! Im a mother of 9 children and my husband and I have been laid off work for more then a year now. So making meals on a budget is very important as well as making things stretch. Its always harder at the end of the month for us so when I saw that I had all the ingredients to this recipe in my cupboard I thought to my self “perfect”..my kids and my husband LOVED it! Thanks again, this one is going on our “easy meals to make for the month” list!
