Corned Beef and Cabbage

So, tomorrow is March 17th and I am just now getting a post up about St. Patrick’s Day. The truth is we don’t really do anything for St. Patrick’s Day, however I do usually take advantage of the sales during March for corned beef.

My husband loves corned beef and March is really the only time of year that I buy it because I can usually find it on sale for a good price.

The last few weeks I have been watching the ads in my area for a sale on it,  but no one has had it on sale so far this month. I was beginning to think that it was not going to go on sale this year, but today, the day before St. Patrick’s Day, I saw it in this week’s ad.

You would think the stores would have timed that better and had it on sale last week, but at least they did finally have a good price on it.

This means that my husband will get corned beef this week. Will we eat it tomorrow, probably not, since I doubt I will make it to the store until later this week, but he will get corned beef at least sometime this week. He will be glad about that.

I never thought that I liked corned beef until last year when I found the trick to making corned beef that I like and I am looking forward to making it again this week. If you need an easy corned beef recipe, it is a good one.

Now I am curious how many of you like corned beef? Do you buy it this time of year?

  1. Lightbulb time! You just saved me from rushing around like a crazy person tomorrow and not eating dinner until after 8pm. I had it in my head that we HAD to have the traditional dinner ON St. Patty’s day. Duh, I will just do it on Saturday when I have plenty of time to make fresh Soda Bread and cook the meat low and slow. DUH! Thanks for the thought. :-)

  2. Growing up I hated the whole corned beef/cabbage thing all cooked together. After we married I explained to my husband that I didn’t like the spices of the little pack that comes with it and everything tasting the same (to me) because of being all cooked together. What we do now is cook the corn beef separate in the crock pot. We just cover it with water and place the corned beef in fat side up with a large strip of orange peel. Then I cook the cabbage,potato, onion, carrot on the stove just before the meal. We do not use the packet of seasonings at all. The corn beef is so tender this way. Always buy 2 or 3 corned beefs and freeze because it’s about the only time of year it goes on sale.

  3. We love corned beef at our house! My son whose Birthday is March 13th always requests corned beef and cabbage for his B-Day dinner! I always buy extra packages for the freezer, too! I buy the Flat cuts. They can cost a little bit more per pound, but have more meat and less fat to deal with than the point cut. Leftovers make great sandwiches!

  4. Corned beef is one thing I can honestly say I do not like at all! But my husband loves it so I buy one when they go on sale this time of year just for him :)

  5. Our family loves corned beef as well. It is the requested b-day meal around here. We will not be having it today, but sometime this week . Our family likes mashed potatoes & stir-fry cabbage with their corned beef!

  6. We all love corned beef and it has been on sale here for $1.27-$1.37/lb for about a week. I bought 7 of them! We already ate one, will cook another one Friday (going to use your slow cooker recipe w/beer!) and the rest are frozen for future cravings!

  7. we love corned beef here. i actually have one for dinner on sunday night. i generally cook it in the slow cooker with enough water to cover, a splash of vinegar and a brown onion quartered. we usually have it with roast carrots, pumpkin potatoes and white sauce. YUM.
