I recently posted on my Facebook page that I do not have many pork chop recipes on my site because they do to photograph well.
The above picture proves that, as does the hundred or so other pictures of pork chops that I have taken in the past.
We raise hogs, so I have many good pork chop recipes that I would love to share. And today I decided to ignore the fact that pork chops are not photogenic and I am posting a pork chop recipe anyway, because it is a really good recipe.
In fact, this is one of my husband’s favorite ways to eat pork chops.
The salsa and cumin give these pork chops a nice Mexican flavor and you can vary the spiciness by using different salsa.
I enjoy these because they are quick and easy. I think we all need more recipes that include only four ingredients.
Tex Mex Pork Chops
- 1 onion chopped
- 4-6 pork chops
- 1 cup salsa
- ½ teaspoon cumin
- Preheat oven to 350.
- In an oven proof pan cook onion in oil until tender.
- Add pork chops and brown chops on each side for about 2 minutes a side. You are just browning here, not cooking completely. Add more oil if needed.
- Combine salsa and cumin and pour over browned pork chops.
- Cover and bake for 30 minutes. Then uncover and bake 30 minutes more or until done. ( The cooking time will vary depending on the thickness of your chops.)
Note: If you do want to use an oven safe pan, you can brown these on the stove and place in a 9×13 pan or casserole dish and cover with foil to bake.

I love to cook and bake, and it is a good thing, because my family loves to eat. I live with my husband and three kids on 43 acres in Northeastern Oklahoma. Between homeschooling, helping in my husband’s dental office, working on our property, taking care of three dogs, and raising hogs as a side job/hobby, I am constantly on the go like most of you.
Those look so good. I like the “fancier” pork chops like that but not everyone in my house does so we normally stick to salt and peppered chops with country gravy.
Thank you for posting your recipe, despite the pork chop’s inability to photograph well. I have a very small arsenal of recipes for it, so I usually don’t cook with them very often. I look forward to reading and trying your pork chop recipes!

This sounds really good..but, could you tell me what step to use the onions? or am I missing something in the recipe? Do you cook them while browning the chops, or add them to the salsa? thanks

My mom had two recepices that I LOVED growing up when she made pork chops. She would take a couple of cans of stewed tomatoes with a can of tomatoe paste and put chopped onions. She would cook it in the oven but i have done it on the stove top. They are really good.
Another one that is not so healthy is she would brown them and put them in the oven with cream of chicken soup. LLLLLLLOOOOOOOOOVVVVVVVEEEEEEE it. Mind you i havent had those in a LONG while since I am trying not to weigh a thousand pounds !

Pork is really cheap in Portugal and it’s good quality…so I try lots of dishes…but can I photograph them for my blog? No.
The ingredients in this recipe sound great and to be honest the picture is not that bad

We have lots of deer in our freezer so I think I will try this with deer cube.
I had one recipe I enjoyed with pork chops (with a cheese sauce) until I modified the recipe with salsa. Plus, rather than doing it on the stove, I baked it in the oven. It’s basically a cheese sauce with salsa. The family enjoyed it–and it was easier than the other recipe. I may add cumin next time. Thanks for the recipe.
I made these and made a few changes. I didn’t have cumin, so I substituted chili powder, and added garlic powder and taco seasoning to the salsa. Ain my opinioin, there is no way you need to cook these for an hour. I did mine for 30 minutes and they were perfect.
