Chili Cornbread Bake

This is one of those quick and easy, yet very kid friendly meals. I made this a few weeks ago and my kids loved it. Even my son, the picky eater of the family, had seconds on this Chili Cornbread Bake.

This will definitely be making an appearance on our menu plan again.

I’ve done something similar but different. I put leftover chili in a 9×13 pan. I cut hot dogs into it and then top it with cheddar. I make cornbread and pour that over the top then bake it till the cornbread is done and the chili is hot.

We call this Mexican Cornbread…sooo good with a little salsa!

@blossomteacher, We love Mexican cornbread, but I had never had meat and used it as a main dish until I tried it this way. I love how easy it is.

Perfect timing! I have 1/2 pound of cooked hamburger from tonight that I wasn’t sure what to do with. I will pick-up some corn and then cut the recipe in half. Thank you Lynn!

What did you serve with this for sides? It’s like a main dish and side (the cornbread part) all in one. I will be omitting the green chiles, but otherwise it looks yummy :)

@chris, This is really a meal all by self because it is cornbread and meat all together in a casserole of sorts. So I usually just serve it with a salad or other vegetable and that is all. I hope that helps.

In our home this called Mexican Cornbread, and I cook the meat with taco seasoning. And it may seem odd, but When eating I like to dip mine in ketchup. :o )

Hmmm…. I might experiment with doing these as individual servings in large muffin tins then freezing– it’s be something quick to grab for lunch at work!

Right now my oven is broke. Could you make this in a crockpot?? If so how long would you cook it?
