Summertime Food and the 4th of July

I can’t believe today is July 1st. Well, okay maybe I can believe it because the weather in Oklahoma has felt like July for a few weeks now, but in general summer is going by very quickly this year.

Many of you will be spending time with family and friends this weekend at picnics and barbecues. We will be spending the weekend at home with just us, but I have a few fun things planned to make it a special weekend.

Today I thought I would share a few of our favorite summertime foods. I hope you enjoy them!

  2. Well, now we will be making the Chipotle Bacon Potato Salad…

    We will also make Frosty Strawberries. We ALWAYS have it on the 4th!

    Frosty Strawberries

    2 c. sifted flour
    ½ c. brown sugar
    1 c. walnuts, chopped
    ¾ c. butter, softened
    2 c. whipping cream, whipped
    2 egg whites
    1 c. sugar
    2 T. lemon juice
    2 c. frozen strawberries, partially thawed

    Cut flour, brown sugar, and walnuts into butter. Spread evenly over a baking sheet. Bake at 325 degrees for 20 minutes, stirring often. Sprinkle 2/3 of the cooled mixture into the bottom of a 9 x 13 pan. Combine egg whites, sugar, strawberries and lemon juice. Beat on high (with clean beaters) for 10 minutes or until stiff peaks form. Fold in whipped cream. Spoon over crumbs. Top with reserved crumbs. Freeze at least 6 hours.

  3. Oh my goodness, all of this looks amazing. The greek salad jumped out with the pepperoni and olives (YUM) and then we got to the frozen mousse. Oh my, it looks like you’re going to have a lovely weekend :-) Enjoy your celebration!!!
