
Today for Ground Beef Thursday I have a very simple recipe for you. It only calls for a few ingredients and kids love it. So easy and so good!
We like to eat these just as is, but you could easily serve these as meatball sandwiches or with extra sauce over potatoes or rice.
Barbecue Meatballs
- 2 pounds lean ground beef
- 1 egg
- 1/4 cup quick cooking oats
- 2 cups barbecue sauce (use your favorite brand)
- In a bowl combine 2 pounds ground beef, egg, and quick oats. Mix until just combined. Form into meatballs using 2-3 tablespoons of meat mixture and place in a 9×13 pan.
- Bake meatballs at 350 degrees for 30 minutes. Remove from oven and pour barbecue sauce over meatballs. (If your meat is not lean, you will want to carefully drain some of the fat off of the meatballs before adding the sauce.)
- Continue baking for 25-30 more minutes or until the meatballs are done.

I love to cook and bake, and it is a good thing, because my family loves to eat. I live with my husband and three kids on 43 acres in Northeastern Oklahoma. Between homeschooling, helping in my husband’s dental office, working on our property, taking care of three dogs, and raising hogs as a side job/hobby, I am constantly on the go like most of you.
Instead of finishing in the oven with sauce, could I remove the meatballs to the crockpot? This sounds like a great idea for fellowship dinner at church.
I think that would work fine or just skip the oven and brown them really well on the stove and then put them in the crockpot. I think browning them well should remove enough of the grease that you would be fine.
I made them last night with turkey. They turned out great.
This sounds yummy but I’m curious what sides will you eat with them? I can only think of salad and I know I’m missing some obvious choices.
Salad, bread, and we like them with oven potatoes, baked potatoes, or something like that. I hope that helps.
I think this may be lunch tomorrow. I’ve got some hamburger I need to use and have other plans for dinner. I’ll just have to remember to start early enough in the morning.
do these freeze well? If so would be a perfect side to add quick with many pasta dishes.
Meatballs freeze really well. You can freeze either before or after cooking and it works great.

I saw your comment on this weeks menu. I made these for a party a few weeks ago. I made them per directions above with just a little BBQ sauce. I put them in the fridge and then the next day at the party, put them in a crockpot with more BBQ sauce and they warmed great! That would save time in the day you want to eat them.
That is a good idea and would solve the issue I had. I am going to have to try that. Thanks for sharing what worked for you.
