Grilled Carrots

The weather in Oklahoma has been quite warm  hot this year, so roasting vegetables in my oven has not been high on my list of side dishes to make.

Instead I recently decided to try grilling them. Now, I make grilled vegetables all the time, but this time I decided to grill my carrots very similar to how I roast them.

And I am so glad that I tried this. It worked well and I loved the smoky flavor that grilling the carrots gave them.

This was really simple to do and is more of a technique than a recipe. I simply cut my carrots into strips and tossed them in a little olive oil, salt, and pepper.

Then I placed them on a sheet of foil and place the sheet of foil on the grill. I let them cook over medium high heat for about 4 minutes and then I stirred/flipped them some and let them cook a few more minutes until crisp tender.

That is all. It was really easy and was a great side dish to serve with grilled meat.

Now, I think if you cut your carrots much larger you could probably place them right on the grill, but I think the foil makes it a little less messy.

  2. We’ve grilled whole carrots before… same EVOO/salt/pepper but put them directly on the heat for a minute, then to the top shelf or off to the side for a few more minutes. If you have a cooling rack, you can use that to criss-cross your grates to help prevent smaller carrots from slipping through the cracks.

  3. I wonder how this would work on an indoor sandwich grill, like a George Foreman?

    • I think it would work well. The flavor might be a little different, but I think it would be fine. I would love to hear how it works if you try it.

  4. I am going to have to try that with carrots this summer. My families favorite vegetable on the grill has been fresh broccoli. Instead of using foil to grill the vegetables on, I use a grill basket or my grill wok. I usually put some EVOO and then season with a ready made season salt/pepper mixture or use a garlic infused oil.

    We do carrots on the grill, but we make foil packets so we can flip them. Add some potatoes cut up, onions cut up, a stick of margarine, some garlic powder and you’re all set to go.

  6. We made these yesterday for Father’s Day but it took about 30 minutes total for them to cook! That being said, they were AMAZING!!!

  9. These look great! They remind me of the grilled sweet potato recipe I shared a few weeks ago. And yes, I agree..its WAAYYY too hot in here this early in the summer. Sigh.
