Grilled Tomatoes with Mozzarella Cheese

Grilled tomatoes with mozzarella cheese is one of those simple, but delicious summertime recipes that everyone loves.

These are so easy and good! And really are a delicious and healthy summertime treat.

We like to keep these simple, but you can easily sprinkle on some fresh herbs to give them a little more flavor. You can even drizzle these with a little oil, but really we like them with just tomatoes and mozzarella.

    They also taste good with a piece of fresh basil and some balsamic vinegar drizzled on top, after you’re done grilling the tomato and cheese. Like a grilled warm caprese salad. I have a recipe too with tomatoes cut in half and grilled with a pesto and cheese mixture. I don’t have the recipe memorized, but I made it a couple years ago when family was over for dinner and they loved it.

  2. For the 4th, my mom grilled green tomatoes that she had marinated in balsamic vinegar, garlic and olive oil. When she grilled them, she put a fresh leaf of basil in between the tomato slice and fresh mozzarella. It was delicious.

  3. I also use the balsamic vinegar and fresh basil with just a drizzle of olive oil. Especially tasty with the heirloom tomatoes from my garden, which are not so pretty, but incredibly flavorful.

  4. Made these last night for supper to go with our steaks and salads. They were YUMMY! We are planning to have then again tomorrow with our ribs. Our tomatoes are in by the bucket load and we plan to can most of them, but this recipe will be worn out by the time fall rolls around!
