Menu Plan {August 5th-11th}

This week marks the beginning of a very busy few weeks for me, so I am planning ahead and will be doubling a few recipes to put in the freezer to use later this month.

Yesterday I tripled a batch of homemade pancakes so that I would have plenty to put in the freezer for breakfasts. I also made a few batches of homemade granola last week.

This week I will be making a huge batch of fried rice to freeze. I will be making pork fried rice, but really any fried rice works well for freezing.

I also plan to use my crock post several days this week for slow cooker fajitas and for crock pot chicken tacos. Both these recipe freeze well, so I will be making extra of those as well.

And then if everything goes as planned I hope to make a large batch of corn dog muffins to freeze for lunches.

I will be doing a ton of freezer meals over the next few days – school is starting, I am taking two graduate classes this semester, I have association (union) meetings twice a month (I am an elected officer), Back to School Night and two nights of parent conferences happen before the end of the month, blah blah blah! It’s an extra busy time of the year for me. It’s also still REALLY hot here, so slow cooker meals and things we can grill are ideal. Mostly what I’m preparing for the freezer are chicken breasts or pork chops in some type of sauce/marinade that can go right into the slow cooker or be defrosted for the grill. I already have a few items stashed in the freezer – casseroles, cooked shredded chicken, chicken broth, homemade burger patties – that will make dinner prep easier. This time of year we’ll stick to lighter sides like salads, rice, and fresh fruit/veggies to go with the freezer meals.   2. THANK YOU for the fried rice recipe! I’ve been looking for lunchbox inspirations for DS8 and this looks perfect and so simple!

    My husband is from the Middle East, and one of his favorite dishes is very freezer friendly. It’s called makloobe. Basically, what I do is get out my rice cooker. Sear off some pork chops, pan fry some eggplant slices (I salt them and squeeze first) in olive oil, and drop some fresh tomatoes in boiling water to remove skin. Then, in the rice cooker insert, in a single layer pork/eggplant/tomato slices, parchment paper, pork/eggplant/tomato slices, parchment, etc. and freeze. Once frozen, pop them out and wrap each layer in foil. To make the meal, put a layer in the rice cooker, add 2 c rinsed rice and 4 c water, and salt. Turn on the rice cooker. When done, let sit for about 10 min, then invert onto a plate. Serve with plain, full fat yogurt. Absolutely delicious, and very little work.

  4. We are CSA members and have had a lot of produce to process. I love freezer cooking. Lately, I have made tomato bisque, italian sausage, calzones, breakfast sausage, lasagna, muffins, burritos (chicken and ground beef) and pizza dough for the freezer. I also throw several chicken breasts in the crock pot and let them cook, them shred or chop for a quick meal. Browning ground beef with onions, mushrooms or taco seasoning makes a quick fix too. Such a time savor.

  5. Looks yummy! (and beautiful pics!). I, too love freezer meals and do a lot of freezer cooking. I’m enjoying looking at yours and others’ freezer recipes, as we are expecting our second child in the fall and I want to have our freezer fully stocked, and hopefully include some new favorites too.
