Strawberries and Cream Baked Oatmeal

Strawberries and Cream Oatmeal. Delicious.

Really there is no other way to describe this. It is like a gourmet grown up version of those little packets of strawberry and cream oatmeal. And this baked oatmeal is not just for grown ups, it is for kids of all ages. So delicious!

I made this as a last minute decision one afternoon when a bowl of overripe strawberries were staring at me when I opened the fridge. I did not want to throw them out, but I was not sure of how I wanted to use them either.

Baked oatmeal is a favorite in our house, so I instantly thought a new version of baked oatmeal would be perfect.

Besides the strawberries I also had a small container of whipping cream in the fridge and what better way to make the cream part than with real cream. And I am so glad I used real cream in this. It gives it that over the top rich and creamy taste.

You need to make this for your family. Really it is so good. And it can be put together the night before and baked in the morning for a quick and easy breakfast. This is a perfect way to eat oatmeal during summer berry season.

    • Sorry about that. I just fixed it. You add them at the very end. You stir all the ingredients together well then carefully stir in the strawberries, then you bake it. Thanks for letting me know I missed that..

  10. Thanks so much for sharing this – it was AWESOME!!! You could probably use any fruit too – I happened to be on strawberry overload so strawberries were perfect! Oh, I didn’t have any heavy cream, I used skim milk and it worked out just fine! I too an interested in whether frozen fruit would work as well.

    • I tried this recently with a different fruit and it worked great. I will be sharing it soon. And yes all milk works too the cream just makes it richer and creamier. I am glad you enjoyed it.

I’m thinking about freezing a few batches of this while strawberries are in season. Would it freeze well? If so, do you bake and then freeze, or bake after freezing and defrosting?

  16. Would the bake time be the same for a half batch? Or should I just go by what it looks like? Thanks!

    • If you make a half batch and make it in an 8×8 or that type of square pan I would probably cook it about 5 minutes less and check it then. It has been awhile since I made a small batch, but I think it took a few less minutes to bake it. I hope that helps and I hope you enjoy it!

  17. Couldn’t believe that oatmeal could taste this good. I had some for dinner the night I made it, for breakfast the next day, and I took some as my after-lunch snack one day too!
