Bacon and Egg Salad Sandwiches– Use gluten free bread and bacon

    Lynn, what GF bread do you find taste the best for sandwiches? The ones I have tried taste like, well, nothing.

    • Well some are better than others. My kids favorite is Udi’s. I keep it in the fridge or freezer until we use it. Usually in the freezer and just take out what we need. We still prefer it toasted or as grilled cheese type sandwiches. If my kids just make themselves a tuna sandwich they usually toast the bread first. We do eat it plain non toasted as well, but toasted is our favorite. I hope that helps.

  2. Mmm, I think I am going to have to try those enchiladas–and your homemade enchilada sauce! We are not GF so I will just use our flour tortillas, but I love to try new ways to do recipes! The enchiladas I’ve been making for years don’t call for enchilada sauce, because I was SUCH a picky eater and I am slightly afraid of it, haha! That is something we haven’t tried yet; I think that’s going on my menu within the next month!

    • I actually prefer my enchiladas with flour tortillas and miss them now that I am gluten free, so I think you will be fine using flour tortillas. I hope you enjoy them.
