Oatmeal Griddle Cakes~A quick, easy, and healthy breakfast treat.
I think these oatmeal griddle cakes are one of my favorite recipes that I have made for my Cooking Through My Collection series. These were a little different than your basic pancake, but they are so good.
These oatmeal griddle cakes come from the Joy of Cooking cookbook. This is a classic cookbook that has been around for years. There are many editions of this cookbook. The edition I have is from 1981 and I picked it up used at a book sale.
Joy of Cooking is one of those classic cookbooks that contain many basic recipes that every cook should have in their collection. What I love about older cookbooks is that they usually contain recipes that use basic ingredients. They are frugal, cook from your pantry ingredients, type of recipes.
Today’s recipe for Oatmeal Griddle Cakes is just that. It contains simple ingredients. It also contains an ingredient that helps you use up leftover oatmeal. Turning leftovers into a second meal is one of the best time and money savers in the kitchen.
Because these griddle cakes contain cooked oatmeal, they are the perfect way to use up that last little bit of oatmeal you may have from a previous breakfast.
These oatmeal griddle cakes are basically an oatmeal pancake. They do have a little different texture than your basic pancake though. The cooked oatmeal in these make them a little more dense than a normal pancake, but they also have a creamy texture that you don’t have in a regular pancake. I also found that they take a little longer to cook than a regular pancake.
The original recipe from Joy of Cooking, called for evaporated milk, so that is what I used. It worked fine, but I think you could probably use regular milk or buttermilk in these as well. I am sure the evaporated milk makes them richer and a little different, but I think regular milk would work too.
For my family I doubled this recipe, so if you are serving a family you might want to double this recipe.

Oatmeal Griddle Cakes
- 1/2 cup flour ( I used a gluten free flour blend)
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 egg
- 1 1/2 cups cooked oatmeal
- 1/2 cup evaporated milk
- 1/4 cup water
- 2 tablespoons butter, melted
- In a bowl combine cooked oatmeal, evaporated milk, egg, water, and melted butter.
- Stir in flour, baking powder, and salt.
- Stir to combine well.
- Scoop batter onto hot griddle or pan.
- Cook for 2-3 minutes and flip griddle cakes and cook 3 or so more minutes or until done.
- Serve with butter and syrup or with fruit.
