Chili is the perfect food for this time of year. It is easy to make. It can be made and ahead and freezes great. It is also easy to make in a large batch for feeding a crowd. It works for a slow and relaxing type of meal and also for a meal at the end of a crazy day.

Serve it with cornbread, chips, or fritos and you have a meal just about everyone will love.

It works for just about any meal, any time.

Because chili is the perfect food for this time of year, I thought I would share a few of my favorite chili recipes with you today.

I love “chili” season! Lately I’ve been using half the meat and twice the beans/veggies – still tastes like yummy chili to me. My bean of choice is small red beans rather than the larger kidney beans, but I also add in pinto beans and black beans to the recipe. My Nesco oven holds more than my crock pot, but can be set as low as 200F for long slow cooking, so I’ve been making lots of soups and chili in the Nesco. I recently made a rather spicy chili that my son and co-worker called “the best chili I’ve ever had!” Now, if I can just figure out what I did in making that dish!

    • The Nesco is a great idea, especially when make it for a large group. I agree on changing it up. I often use whatever beans I have or am in the mood for. And sometimes it is really spicy and other times it isn’t.
