I think the reality is that we all do. Gluten free dinners can be a challenge, especially when it comes to gluten free dinners that the whole family will love. And that also won’t break the budget.

That is why I am excited about a new series I am starting for 2015. It is all about gluten free dinner recipes. Each week I plan to share a gluten free dinner idea. These recipes will all be easy to make, family friendly, and not cost a fortune.

For the series I plan to share new recipes like I am sharing today, but also link to some of my older recipes, and other online recipes, showing you how to make them gluten free.

One of my goals with this series is to help those that are new to gluten free or are struggling to figure out gluten free. I want to show you that gluten free can be easy and delicious. It does not have to be difficult and it can be food your whole family will enjoy. And I want to show you how.

I also want to help those that might be in a gluten free dinner rut. We all have those. We are tired of serving the same thing over and over again, but we have no desire to waste time and energy figuring out new gluten free recipes. I hope this inspires those of you that might be feeling that way.

And I hope it will help those that just feel like gluten free is too overwhelming and challenging. Those of you that are crazy busy and find gluten free cooking too challenging. I want to show you how homemade gluten free dinners can fit into your busy life.

I hope it is a series that you will find helpful and enjoy.

Gluten Free Cheeseburger Pie

Gluten Free Cheeseburger Pie anyone? 

This is a simple recipe that my kids love. It has all the flavors of a cheeseburger, but in a simple casserole type meal. This is one of those recipes that everyone will love. Both gluten free and regular eaters. My whole family enjoys this.

For the topping on this I used individual gluten free flours, but you could easily use your favorite gluten free blend in place of the flours and the xathan gum in the batter. I prefer the individual flours for this, but either way will work.

This also makes a pretty large pan. It serves my family of 5 with some leftover. So if you have a small family, feel free to cut this in half and make it in an 8×8 pan.
