<p>I hope you all are not tired of<a href="http://www.lynnskitchenadventures.com/tag/baked-oatmeal" target="_blank"> baked oatmeal recipes</a>, because I have another one for you today. And I think this one, might be my new favorite.</p>
<p>I came up with coconut baked oatmeal because I am really trying to work <a href="http://www.lynnskitchenadventures.com/2012/01/starting-the-day-right-healthy-breakfasts.html" target="_blank">on making breakfast healthier</a>.</p>
<p>Everyone in our family loves baked oatmeal and it is a healthy breakfast, so it works well for us and we eat it at least once a week. But since we eat it so often, I am always trying to come up with different versions to change it up. An this coconut baked oatmeal is my newest baked oatmeal creation.</p>
<p>I love making this coconut baked oatmeal the night before because all I have to do is put it in the oven in the morning. So easy and so good!</p>

<h2>Coconut Baked Oatmeal</h2>
<ul>
<li>3 cups quick cooking oats</li>
<li>1/2 cup brown sugar</li>
<li>1 cup milk</li>
<li>2 tablespoons coconut oil ( you could use butter or regular oil here, but I like coconut oil for this one)</li>
<li>2 eggs</li>
<li>2 teaspoons baking powder</li>
<li>3/4 teaspoon salt</li>
<li>3/4 cup yogurt, either plain or vanilla works</li>
<li>3/4 cup coconut</li>
</ul>
<ol>
<li>Mix all ingredients together and stir well.</li>
<li>Spread in a greased 9&#215;13 pan.</li>
<li>Bake at 350 for 20-25 minutes.</li>
<li>If you like it a little crunchy on top cook for a few minutes longer.</li>
<li>serve with warm milk poured over top.</li>
<li>Enjoy!</li>

<p>We love <a href="http://www.lynnskitchenadventures.com/tag/homemade-granola" target="_blank">homemade granola</a> and I make it often. One of the things I love about homemade granola is that I can control the ingredients that go into it.</p>
<p>It is also easy to change it up and make all kinds of different flavors. The coconut granola I am sharing today is one of the newest ways that I have changed it up a little.</p>
<p>This coconut granola is my new favorite granola. I love eating a bowl of it with yogurt or milk for lunch. Yes, I eat granola for lunch often because it is a healthy and quick lunch, but this is also perfect for a healthy breakfast.</p>
<p>If you have not tried homemade granola I encourage you to give it a try.</p>

<h3>Homemade Coconut Granola</h3>
<ul>
<li>1/3 cup brown sugar</li>
<li>1/3 cup coconut oil</li>
<li>1/2 cup honey</li>
<li>2 teaspoons vanilla</li>
<li>3 cups old fashioned oats ( I used gluten free)</li>
<li>4 cups quick oats ( I use gluten free)</li>
<li>1 1/2 cups coconut</li>
<li>1/2 teaspoon coconut extract (This is optional, but really gives it a nice extra boost of coconut flavor.)</li>
</ul>
<ol>
<li>In a small saucepan mix together brown sugar, coconut oil, and honey. Bring to a boil. Remove from heat and add vanilla and coconut extract.</li>
<li>In a large bowl combine oats, coconut, and sugar/oil mixture.</li>
<li>Stir until oats are well coated and everything is combined.</li>
<li>Spread into 2 9&#215;13 pans.</li>
<li>Bake at 350 degrees for 10 minutes.</li>
<li>Stir, turn off your oven, and put the granola back into the oven for 3-4 hrs. The heat left in the oven will finish cooking this. I love this because I can make this and walk away for a few hours without having to continually stir the granola.</li>
<li>Remove from oven after 3-4 hours. Let cool and store in an air tight container.</li>
</ol>

<p>This is the time of year where many people are focused on healthy eating and setting goals for changing the way they eat. It is a fresh start to a new year.</p>
<p>One of the best places to start eating healthier is breakfast. It is the first and most important meal of the day. So, over the next few weeks I hope to share some ideas and thoughts on starting the day right by eating a healthy breakfast.</p>
<p>Now if you know me in real life, than you know this is an area I struggle with and have my whole life. I have never been a huge breakfast eater. I am just not hungry first thing in the morning and when hunger finally does strike at 10:30 or 11:00 I often grab something unhealthy to eat. This is something I really know I need to work on and change. Even if I don&#8217;t grab breakfast first thing in the morning, when I do get hungry, I need to head towards something healthy, not junk food.</p>
<p>I know the importance of a good breakfast and I am trying to instill in my kids the importance of starting the day off right with a healthy meal. I am hoping that my bad example of not eating breakfast has not ruined them.</p>
<p>Thankfully my husband and kids are all breakfast eaters. They do not take after me in this area. They need breakfast. In fact, they love it, and this makes it much easier to instill in them the importance of a good breakfast. They wake up hungry and ready for a good meal.</p>
<p>My struggle though is often getting that meal ready for them. And it is something that I need to work on.</p>

<p>Yes, I love my <a href="http://www.lynnskitchenadventures.com/tag/baked-oatmeal" target="_blank">baked oatmeal recipes</a> because I can make them ahead and we eat them often. My kids love<a href="http://www.lynnskitchenadventures.com/tag/homemade-granola" target="_blank"> homemade granola</a> and you will often find a jar of it in my kitchen, but the reality is that all too often over the last few months on those crazy busy days, we have grabbed that box of not so healthy cereal or container of store bought yogurt or granola bars.</p>
<p>So, one of my food goals for 2012 is to bring back the healthy, or at least healthier, breakfast at our house.</p>
<p>I do find that breakfast goes much better if I have a plan, so I am going to try hard to make a breakfast menu plan each week. I make a dinner plan every week, but often I skip the breakfast planning and those are usually the weeks that we end up not eating well. So, starting with a breakfast plan each week is my first goal.</p>
<p>I have actually been working on this goal for the last few weeks and I will be sharing a new recipe for coconut baked oatmeal and a recipe for homemade coconut granola that we have been enjoying. Both recipes have helped me put a healthy breakfasts on the table the last few weeks.</p>

			<content:encoded><![CDATA[<p></p><p>When I look back over the last year I cannot believe how many recipes I have shared. And I cannot believe this is the last week of 2011, but it is, and 2012 will be here in just a few short days.</p>
<p>A few weeks ago <a href="http://www.joyinmykitchen.blogspot.com/" target="_blank">SnoWhite from Finding Joy In My Kitchen</a> contacted me about participating in a Countdown to 2012 where we would spend that last week of the year highlighting some &#8220;best of 2011&#8243; recipes. I loved the idea and knew it would give me a chance to revisit some of the fun things I have covered over the last year.</p>
<p>Each day this week we will be focusing on a different theme and today is breakfast. So, here are a few of my favorite breakfast recipes from 2011.</p>

<p style="text-align: left;">A few months ago I shared my <a href="http://www.lynnskitchenadventures.com/2011/09/breakfast-fried-rice.html" target="_blank">breakfast fried rice</a>. We love this and I love the fact that I can make up a large batch to eat over a few days or even freeze for future use. This also works not only for breakfast, but for a breakfast for dinner type meal.</p>

I love homemade versions of our favorite foods and this was one of those things that I was so glad to figure out. These are quick and easy and so much cheaper than the kind you buy.</p>

This one is a special treat type of baked oatmeal though. This is a baked oatmeal that is perfect for the holidays, because it contains chocolate.</p>

<h3>Double Chocolate Baked Oatmeal</h3>
<ul>
<li>4 ½ cups quick cooking or regular oats (either one works or a mix of both)</li>
<li>¾ cup brown sugar</li>
<li>1 ½ cups milk</li>
<li>2 tablespoons butter, melted</li>
<li>3 eggs</li>
<li>3 teaspoons baking powder</li>
<li>¾ teaspoon salt</li>
<li>2 teaspoons vanilla</li>
<li>¼ cup cocoa</li>
<li>4 ounces cream cheese, at room temperature</li>
<li>1 cup chocolate chips.</li>
</ul>
<ol>
<li>In a large bowl, combine all ingredients. Mix well and place in a 9&#215;13 pan.</li>
<li>Bake at 350 for 20-25 minutes.</li>
<li>Serve as is or with a little milk poured over top.</li>

<p>One of the things that I love to do for Christmas is to make breakfast special. Breakfast is often a forgotten meal, where we rush about trying to get started with our day. But during the holidays it is so nice to slow down and spend some time with our family, enjoying a nice breakfast.</p>
<p>My mom always made special holiday breakfasts when I was growing up and we always loved them. In fact, they are one of the things that I remember most about the holidays.</p>
<p>So, I encourage you to slow down during the holidays and make a special breakfast or two for your family. Enjoy a special meal together and create a few memories.</p>
<p>This Orange French Toast that I am sharing with you today is a perfect special breakfast of the holidays. This is a recipe that I have been making for years. This recipe is one of those treasured recipes that is hand written on a 3&#215;5 card and was given to me when I got married. I love recipes like this that are passed on to one another like that.</p>
<p>A few weeks ago <a href="Udisglutenfree.com" target="_blank">Udi&#8217;s</a> sent me a box full of gluten free breads to try and challenged me to use them in a recipe. Several in my family eat gluten free, so I was thrilled to give this a try.</p>
<p>French toast is not something that we have enjoyed a lot the last two years and I immediately knew it was what I wanted to use some of my <a href="Udisglutenfree.com" target="_blank">Udi&#8217;s bread </a>for.</p>
<p>And I am so glad I did. I forgot how much I missed french toast, especially this orange french toast. Really, I could not tell a difference at all. It was so good!</p>
<p>I love french toast and this Orange French Toast is a little different than your normal french toast, so it makes a perfect holiday breakfast.</p>
<p>This is one of those recipes that works well both gluten free and non gluten free. It is a breakfast anyone can enjoy!</p>

<h3>Orange French Toast</h3>
<ul>
<li> 4 eggs</li>
<li>1 cup orange juice</li>
<li>1 tablespoon brown sugar</li>
<li>10 slices of bread (It may take a little more or less depending on the sizes of your pieces.)</li>
</ul>
<ol>
<li>In a shallow bowl or pan combine eggs, orange juice, and brown sugar.</li>
<li>Dip bread in orange juice mixture until well soaked on both sides.</li>
<li>Place on a hot griddle or pan. Cook about 2 minutes or until golden brown. Flip over and cook the other side until golden brown.</li>
<li>Serve and enjoy!</li>

Wouldn&#8217;t a gift basket full of different homemade granola be a great gift to receive?</p>

<p>The first time I saw a recipe for Homemade Chocolate granola was from <a href="http://www.parentingmiracles.net/2009/10/chocolate-almond-granola/" target="_blank">my friend JessieLeigh</a>. I instantly knew I had to try the chocolate granola combination. I love chocolate and I love granola so I knew it would be a combination I would enjoy. My recipe is a little different than hers. And I think mine has a little more, or maybe a lot more chocolate, because you know you can never have too much chocolate. Her version has almonds in it, which I think would be a great addition if you can have nuts.</p>

<h3>Homemade Chocolate Granola</h3>
<ul>
<li>1/3 cup brown sugar</li>
<li>1/3 cup oil</li>
<li>½ cup honey</li>
<li>½ cup cocoa</li>
<li>3 cups old fashioned oats</li>
<li>4 cups quick cooking oats (you can use all old fashioned oats, but we like the texture with both kinds)</li>
<li>1 cup chocolate chips</li>
</ul>
<ol>
<li>In a small sauce pan combine brown sugar, oil, and honey. Bring to a boil. Remove from heat and whisk in cocoa.</li>
<li>Place oats in a large bowl and stir in sugar/cocoa mixture.</li>
<li>Spread into 2 9&#215;13 pans.</li>
<li>Bake at 350  degrees for 10 minutes.</li>
<li>Remove from oven and stir in chocolate chips.</li>
<li>Turn off oven and return granola to oven. (Yes you turn the oven off and place granola back in it. This helps the granola to finish cooking without over cooking it.)</li>
<li>Leave in oven for 1-2 hours.</li>
<li>Remove from oven and let cool.</li>
<li>Store in sealed containers or jars.</li>
</ol>

<p>My baked oatmeal recipes all started back in May of 2009 when I shared my <a href="http://www.lynnskitchenadventures.com/2009/05/peanut-butter-baked-oatmeal.html" target="_blank">Peanut Butter Baked Oatmeal recipe</a>. It was a recipe that I came up with because I was looking for a healthy kid friendly breakfast to serve me family. I had never seen anything like it and since my family loved oatmeal and peanut butter, I thought it would be a perfect match.</p>
<p>Since that time I have come up with many versions that my family loves. Over the last two and a half years I have shared<a href="http://www.lynnskitchenadventures.com/tag/baked-oatmeal" target="_blank"> eight versions of baked oatmeal </a>and I have several more that I hope to share over the next few months.</p>
<p>As you can tell my family loves baked oatmeal, and from all the comments and questions I get about my <a href="http://www.lynnskitchenadventures.com/tag/baked-oatmeal" target="_blank">various baked oatmeal recipes</a>, I know you all love them too.</p>
<p>Healthy, homemade breakfasts are some of my favorite recipes to share. I love knowing that I am helping others start their day with meals like<a href="http://www.lynnskitchenadventures.com/tag/baked-oatmeal" target="_blank"> baked oatmeal</a>.</p>
<p>Over the last few years I have received many comments and emails asking questions about making baked oatmeal, so I decided to write up a post with a few tips and facts. I also thought it would be nice to have all my versions of baked oatmeal in one post for you to reference when you are looking for a version to make.</p>
<p><strong>Baked Oatmeal Recipes</strong></p>

Peanut Butter and Jelly Oatmeal is sure to please any kid.</p>

<p>Now for a few tips for making baked oatmeal that will hopefully answer many of the questions that I have received from you.</p>
<p><strong>Your recipes use mainly quick cooking oats can I use regular or old fashioned oats? </strong>The answer is yes you can use either quick oats or old fashioned oats. Each one will give you a different texture, but they both work. My family prefers all quick cooking oats or part quick cooking and part old fashioned. I have made them with all quick cooking, all old fashioned, and a mix of both, and they all work great.</p>
<p><strong>Can I make baked oatmeal ahead of time and bake it later? </strong>Yes, you can. I do this all the time. In fact, if I am using old fashioned oats in my baked oatmeal, I prefer to make it the night before and keep it in the refrigerator over night. I just put it in the oven in the morning and it works fine. I love doing this because it makes a quick and easy breakfast in the morning. The only recipe that I do not recommend making ahead of time is the <a href="http://www.lynnskitchenadventures.com/2010/12/baked-banana-oatmeal.html" target="_blank">banana baked oatmeal</a> and the <a href="http://www.lynnskitchenadventures.com/2011/11/apple-cinnamon-baked-oatmeal.html" target="_blank">apple cinnamon baked oatmeal</a>. Apples and bananas change color and texture as they sit and it does not make for the best oatmeal if it is not baked right away.</p>
<p><strong>Does baked oatmeal reheat well and if so how do I reheat it? </strong>Reheating the baked oatmeal works fine. I do it all the time. I like to bake a double or triple batch and let my kids reheat it in the microwave for breakfast for several days. This works well and let&#8217;s everyone enjoy a hot healthy breakfast for several days without much work for me.</p>
<p><strong>Can I freeze the baked oatmeal? And if so, do I freeze before or after baking? </strong>Yes, you can freeze the baked oatmeal after it is cooked. It works well cut it into squares after it is cooled, wrap it in plastic wrap or a freezer bag and freeze. Then you can just take it out and heat it as needed.</p>

<h3>Apple Cinnamon Baked Oatmeal</h3>
<ul>
<li>3 cups quick cooking oats</li>
<li>½ cup brown sugar</li>
<li>1 cup milk</li>
<li>2 tablespoons butter, melted</li>
<li>2 eggs</li>
<li>2 teaspoons baking powder</li>
<li>¾ teaspoons salt</li>
<li>1 teaspoon vanilla</li>
<li>¾ cup applesauce</li>
<li>1 teaspoon cinnamon</li>
<li>2 apples, peeled and chopped</li>
</ul>
<ol>
<li>Mix all ingredients together and stir well.</li>
<li>Place in a 9&#215;13 pan and bake at 350 degrees for 25-30 minutes.</li>
<li>Serve and enjoy!</li>
