Simple Summer Sandwich

This is not exactly a recipe but it is a sandwich we enjoy during the summer. You can make it anytime of the year but we like to do make it during the summer when we have fresh tomatoes from our garden. It is a version of a grilled cheese mixed with a BLT minus the lettuce.

This is really good with a crusty sourdough bread and grilled like you would a panini sandwich. If I do not have any sourdough style bread I just use regular bread and grill it like I would a grilled cheese sandwich.

  1. Bacon, Cheese and tomato sandwiches are our favorites in the summer when the tomatoes are fantastic! I’m glad I’m not the only one who loves these instead of BLT’s.

    By the way, I’m having trouble posting comments on your site (I’ve been reading everyday and I try to post). For some reason, Firefox quits sometimes when I try to post here. As you can see, I’m still trying – it works sometimes. Just don’t think I’ve gone away never to return. Jill

  2. I am also glad to know we are not the only one to eat bacon, cheese, and tomatoes. Thanks for letting me know about firefox. Maybe that is why there have not been a lot of comments on the posts lately. I am not sure if there is anything I can do about it.

  3. May I ask, what kind of GF bread do u use?


    • For store bought bread I like Udi’s best. I have used others, but Udi’s is readily available in my area. I also make my own occasionally also.
