Quick Baked Potatoes

I love potatoes, especially baked potatoes, but who has the time to always cooked baked potatoes. I know I don’t.

Baked potatoes take at least an hour and even longer if they are large potatoes. Baked potatoes are not hard at all to cook, but I usually need dinner on the table in a hurry and something that takes over an hour to cook does not often fit into my schedule.

These quick baked potatoes though work great for busy nights. These take much less than an hour. I find that small potatoes can be cooked in about 30-40 minutes like this. That is half the time that baked potatoes usually take.

Not only are they quick and easy, my kids loved them.

  1. We have a microwave/convection oven combo and it is awesome for potatoes! I can make four baked potatoes in 16 minutes and it doesn’t heat up the house. (a really big deal when you live in PHX and it’s still over 100 in Sept)

    • @karen, That would be nice. I am not a big fan of microwaved potatoes because I like crispy skins, but a convection microwave oven combo one would work great. I did not know it would cook them that fast.

  2. what a good idea! thanks for sharing 🙂

  3. These look delicious!

  4. I love a baked potato and the crispier the skin the better for me. These look great and will have to try your recipe soon.

  5. This is such a great idea! Thanks for the tip!

This is a great idea! I usually do baked potatoes in the crock pot. Poke holes with a fork, add a couple table spoons of water, put them on at quiet time (just after lunch) & they’re ready for dinner. I like your quick method that doesn’t require my thinking ahead!

  7. We had these tonight for supper. I am so excited about this new, EASY recipe!!! They were sooooo tasty. I made them with smaller potatoes than what is pictured and would be great as a party finger food too! Thanks!

  8. Look great! I often set the timer on my oven to have baked potatoes started before I get home from work. But that’s not foolproof as I don’t use my oven timer that often and often forget exactly how to set it!

  9. I made these potatoes last night. They were delicious and a hit with the whole family! Thanks for another yummy recipe!

  10. This is a neat idea! I have a microwave/convection oven combo that I’ve never thought to use for potatoes…I bet this would work great in it.

  11. Great tip! I usually microwave to save time, but I also love the crispy skins and the microwave totally doesn’t do that. I’ve never thought of doing it this way. Looks yummy! Thanks!

  12. The trick with using the microwave is to only partially cook them in it. I nuke the spuds for about 5 mins then, put them on the grill wrapped in foil or in the oven and it shortens the baking time dramatically.

  13. Just put these in the oven for dinner this evening. They look like they are going to be fantastic.

  14. These look great! They would be so much easier for Steak Night when friends over! Thanks for the great idea!

This is an AWESOME recipe. My family loved it and it’s fast and cheap. I used Pecorino Romano instead of Parmesan – they’re similar. I coated the potato haves in butter on both sides. Thanks! Daphne

  16. Kathy Davis says:

These potatoes sound really good. Did you use the micro/convection when cooking these? You say “bake” so don’t know if microwave was involved. I’ve just gotten my microwave/convection oven and I’m eager to use it!

  17. Ted Schoonard says:

What are the settings for baking a potato in a microwave convection combination oven

You talk about it but you never give the settings of how to do it
