Menu Plan {January 8th-14th}

As I mentioned last week one of my goals for the new year is to incorporate more healthy breakfasts into our diet. Part of this for me is making sure I have a plan, so this week I am sharing not only my dinner plan, but my breakfast plan as well. And I hope to continue to do this.

Once again I am keeping it simple this week. I have several new recipes that I plan to try, but they are all quick and easy recipes to make.

Here is the plan.


grits and eggs

homemade coconut granola (This is my new favorite granola and I will share the recipe next week.)

yogurt and muffins– I am going to try to use this basic muffin, but use something besides chocolate in it ( Here is my gluten free version.)

cereal and fruit

baked oatmeal

boiled eggs and muffins


breakfast for dinner- eggs, potatoes, and sausage

roast and vegetables

pizza (and my gluten free version)

chicken enchiladas (new recipe)

sweet potato chipotle soup (new recipe)

oven fried pork chops (recipe coming later this month)

pork roast

  1. These all look so yummy! Lunch is typically my hardest meal to eat something healthy. Especially now that we are trying to clean out the pantry for this upcoming PCS. I will definitely have to check out more of your recipes!

  4. I’m glad to see that you will be posting your breakfasts as well. Hopefully I’ll be able to find some new ideas! I’ve got a couple recipes I found here on my meal plan this week, but am most excited to make your Panera Bread Tomato Soup!

    • I am really trying to expand my breakfast menus and recipes and I hope to share them over the next few weeks and months. I think breakfast is an area that many of us struggle with.
