German Potato Salad with Roasted Potatoes

German potato salad is one of my favorite ways to make potato salad! It is a delicious way to change up your basic American style mayonnaise based potato salad.

I have been making versions of German potato salad for years, but I do not think I have ever shared one with you. Since it is a favorite at our house, I needed to fix that.

German potato salad is a great side dish anytime of year, but we especially love it during the summer served with hamburger, hot dogs, grilled chicken, or steak.

A lot of people eat German potato salad warm, and I think that is how it is meant to be served, but we also love it cold. It is really good the next day after the flavors blend together.

Now, I will totally admit that this probably isn’t authentic German potato salad because I have changed it up over the years to how my family likes it. It is however vinegar based and not mayonnaise based which makes it totally different than the regular American style potato salad.

If you have never tried German potato salad you need to because it is delicious!

For my recipe I like to add a little bit of extra flavor to the potatoes by roasting them in the oven. Most potato salads call for boiling the potatoes, but by roasting them it gives them an extra depth of flavor that we love.

German Potato Salad with Roasted Potatoes

Delicious side dish for hamburgers, hot dogs, grilled chicken, and more.

Ingredients
  • 2 pounds red, yellow, or baby potatoes scrubbed and cut into 1 inch or so chunks
  • 6 slices bacon, cut into pieces
  • 1 onion diced
  • 1 teaspoon sugar
  • 1/2 cup white vinegar
  • 1 tablespoon Dijon style mustard
  • 1/4 teaspoon black pepper
  • 1 teaspoon salt or to taste
Instructions
  1. Preheat oven to 425 degrees. 

  2. In a large bowl stir together potatoes, bacon, and onion. Spread onto a rimmed baking sheet or jelly roll type of pan. Bake for 30-40 minutes or until potatoes are tender and bacon is cooked. 

  3. Remove potatoes from oven and place in a large bowl. 

  4. In a small bowl combine sugar, vinegar, mustard, pepper, and salt. Stir into potato mixture until potatoes are well coated. 

  5. Serve warm or refrigerate until read to serve.
