Mexican Chicken Salad

Mexican Chicken Salad is delicious served on bread as a sandwich, on a tortilla as a wrap, on a salad, or with chips and crackers.

I made this Mexican Chicken Salad multiple times over the summer and knew that I had to share it while it was still summer.

Recipes like this work so well when the temperature is hot and you need a quick and easy dinner that doesn’t heat up the house.

Really though this is a recipe that works all year long. We need quick and easy dinners during the fall and winter too.

Mexican Chicken Salad on tortilla

I know I have shared several chicken salad recipes lately. I shared my classic chicken salad and my Italian chicken salad which we love, but I wanted to share one more. So I hope you are not tired of chicken salad recipes. 🙂

This version is a little different simply because it has a more spicy Mexican flavor. I know it isn’t authentic Mexican. It is definitely an American style recipe, but it is so good served on a tortilla or with chips.

One of the things I love about chicken salad is that it can be made ahead. This makes for an easy dinner, but it also makes for easy lunches during the week.

You can make a batch of chicken salad on Sunday and have easy lunches for the week.

Eat it on a tortilla one day. On a salad the next. And with chips and crackers on another day. Cook once and have lunches all week.

This recipe works with any cooked chicken. But to make it really easy you can use a store bought rotisserie chicken.

Mexican chicken salad is a quick and easy lunch or dinner. It is great on bread, on tortillas as a wrap, on a salad, or served with chips and crackers.

Ingredients
  • 4 cups shredded cooked chicken
  • 1 4.5 ounce can chopped green chilies
  • 1/2- 3/4 cup mayonnaise
  • 1/2 cup salsa
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice
  • 1/2 teaspoon salt
  • 1 cup shredded cheddar or colby jack cheese
Instructions
  1. In a bowl combine chicken, chilies, 1/2 cup mayo, and salsa. Stir until well combined. Add more mayo if needed for desired texture. 

  2. Stir in cilantro, lime juice, salt, and cheese. Stir until well combined. 

  3. Serve on bread, tortillas, lettuce, or with chips or crackers.
