Pepperoni Rolls

My family loves pepperoni rolls and last week I came up with this recipe after having something like it at a pizza restaurant. I knew I could easily make a homemade version for much cheaper than the version we had at the restaurant.

These take a little time to make, but they are really easy. They are a nice change from our regular pizza night.

I used Jay’s Signature Pizza Crust from Allrecipes. I like to use this recipe because it rolls out well. You could also use any dough that will roll out well or use a store bought pizza dough.

This recipe is not exact, so I don’t have exact amounts listed. You really don’t need exact measurements for this. You just roll out the dough, layer the cheese and meat on and roll it up.

Yeast

I have been making bread for about fourteen years. I know a lot of you have probably been making it longer than that, but fourteen years is still quite a while. I started making bread, rolls, pizza, and cinnamon rolls when my husband was in college. I started making them because of the cost, it was cheaper. I have continued making them because I think they taste good and I like to bake. I would much rather bake some bread then fix a pan of lasagna. I actually find baking relaxing. So, in fourteen years I have made a fair amount of bread products containing yeast. But I just recently discovered something new about yeast. This yeast

is so much better than this yeast.

Yes, I know yeast is yeast. No, it is not. I could not believe it either. My sister told me about SAF yeast a few months ago. She had read about it and had found some at a store near her. She said she loved it and it made all the difference in her bread, especially her whole wheat bread. Well, I was not sure. I was not convinced. Plus, I had never noticed it in the stores that I shop at. Then when I was placing an order online for dough enhancer, because I can’t find that in my area either, I noticed that they had SAF yeast. The price was good, actually not much more then I paid for the regular yeast at Sam’s Club.

I ordered some and I am glad I did. I have been using it for a couple of months. I have noticed a big difference, in my breads, rolls, and pizzas. I still have some yeast left from before and the few times I have used it, I could tell the difference. The SAF yeast works better. The items rise better.

Why, I am not exactly sure. I looked around online and there seems to be different reasons or at least different opinions. I think the best explanation goes back to baking being a science, and that certain ingredients give you different results then using other ingredients. How’s that for an explanation? Ok, so chemistry was not my best subject. Healthy Harvest and Urban Homemaker have better explanations. They say that it has more yeast organisms. They also claim SAF is what professional bakers use. All I know is that it works better.

Now, if I can just find a source in my area. When I was in OR last month I brought three packages back with me, so that will last me awhile. I guess if I cannot find it here I will have to stock up when I visit OR.

Has anyone else used SAF yeast? Have you noticed a difference?

Spaghetti Carbonara

I have not given up posting recipes. I know my last few posts have been a little off the subject of recipes and preparing food. I will try…… to stay better focused. So, just in case you think I have forgotten about recipes here is a good one we tried this week.

What I like about Spaghetti Carbonara type meals are they make great meals for busy nights. They are definitely a 30 minute or less meal to put together. I have tried other recipes similar to this one but I have yet to find one that we really thought was great. Most were really good but not great. Then I tried this one. This is by far the best Spaghetti Carbonara I have made. We really liked this recipe. It had great texture and taste. I will be making this one again.

Pesto, Cheese, Turkey Sandwich

My basil plant is doing very well this year. I planted it in the ground instead of in a pot. I am glad I did because it has done great. I am picking a lof of basil and I am using it to make pesto.

I have tried a few new ways to use pesto. I tried pesto rice. Let’s just say it was not a hit with my family. My husband ate it for dinner and then told me that I should toss the rest of it out. I know it is bad if he does not eat it because he likes almost anything. So, I will not be making pesto rice again.

I did try it spread on a sandwich and we all loved it. I had some left over foccocia and I used that for the bread. I spread one piece of bread with pesto then layered mozzarella cheese, bacon, turkey lunch meat, sliced tomato, and another piece of mozzarella cheese. I heated it on my grill just until it was warm and the cheese was softened. This made it panini style. This was so good. It was also a quick and easy dinner. I already had the pesto made and it went together and cooked in no time. I served it with a salad and it make a great dinner. I will be making sandwiches pesto again.

Emeril’s Website

I discovered a new recipe website today. It is Emeril’s Website. Okay, I know what you are probably thinking. Emeril? Yes, I know a lot of his recipes are for things most of us would never cook. He uses expensive ingredients and ingredients most of us do not have in our kitchens. But on his website he has several thousand recipes listed. He has over a 1000 desserts and 1500 main dishes. I think many are recipes that sound good and would be things I would cook.

I found it while I was searching for one of his muffin recipes from one of his kids cookbooks. I was surprised to see that it was one his site. A lot of people do not post a lot of their own recipes but he seems to have quite a of them listed. If you like to look at new recipes you should spend some time looking around his site.

And I have tried his Baby Bam seasoning and it is really good and easy to make. That is one of the many recipes he has listed.

Milkshakes

The other day I found a really good deal on raspberries, at least a good deal for my area. They were marked way down because they were not at their peak and were not looking so good. I grabbed several containers knowing that I could freeze some if I did not use them all.

I did freeze most of them but I saved some out for us to eat. I decided to fix raspberry milkshakes for dessert. My kids loved them. Last week also we enjoy peach milkshakes.

I have mentioned several times recently to friends that we like fruit milkshakes, peach, raspberry, strawberry, and any kind of berry. When I have said this people look at me strange and say something like “peach milkshake, I never thought of that”. We grew up eating fruit milkshakes but my husband had never had them. I think we probably made them because we had so many berries and peaches that we got creative on how to use them. But I know it was not just our family who ate them. In the northwest the restaurant Burgerville serves the best, I mean the best, raspberry and other seasonal fruit milkshakes, but here in Oklahoma people seem to think they are strange.

So, are fruit milkshakes a regional thing? Am I the only one who grew up eating them?

Peaches

Last week I posted about buying peaches. We had no trouble eating them all. I bought about 22lbs but it took us less than a week to use them up.

We ate a lot just sliced for breakfasts and lunches. I froze about eight sliced peaches to use in smoothies. One of our favorites is blueberry peach.

We also ate them on waffles.

But our favorite way to eat them was in milkshakes.

I hope to make it back to the orchard the end of this week for more peaches. We want to take advantage of the fresh peaches while we can.

Pork Tortilla Casserole

I had some pork left over from the Pioneer Woman’s Shredded Pork. I also has some tortillas chips that were a little stale. I decided to use both to put together a casserole for dinner. I took the idea of a King Ranch Chicken Casserole but used chips instead of tortillas and pork instead chicken.We all really liked it. It was a good way to use up the pork and chips. All three kids had seconds which is a sure sign that it was a hit with them.

Simple Summer Sandwich

This is not exactly a recipe but it is a sandwich we enjoy during the summer. You can make it anytime of the year but we like to do make it during the summer when we have fresh tomatoes from our garden. It is a version of a grilled cheese mixed with a BLT minus the lettuce.

This is really good with a crusty sourdough bread and grilled like you would a panini sandwich. If I do not have any sourdough style bread I just use regular bread and grill it like I would a grilled cheese sandwich.

Spicy Shredded Pork

Last night I made the Pioneer Woman’s Spicy Shredded Pork. It was so good. We all loved it. My husband said it was one of the the best pork roast he has had. Which says a lot since we raise hogs and I have cooked a lot of pork roasts.

Her recipes says to cook in the oven for a long time. I tried it in the crock pot and it worked great. It was very moist and tender. I shredded it up and placed some of the juices over it. We then ate it on tortillas with home made refried beans and guacamole. All three of my kids thought it was really good. I will definitely be making this again.
