Easy No Bake Peanut Butter Treats

We like peanut butter around our house. If you add chocolate it makes it even better. My husband thinks peanut butter is good on just about anything. Well, not quite anything but most things.

I found this recipe some time ago. I took it recently to a church barbecue. They were a hit.

Favorite Kitchen Tool

This is a great one pot, quick, and easy dinner. I love this recipe when you need to make dinner in 30 minutes or less. You can have this on the table in 30 minutes.

If you add salad you have a great meal. Recipes like this are great for busy days. Most of the ingredients are things you usually have on hand.

This is my favorite banana bread recipe. I make it more often then any other banana bread I have tried.

It came out of Martha Stewart’s Entertaining Cookbook which was her first book back in 1982. Martha Stewart likes to make her recipes just a little different then the average one. This one is no exception.

Banana Bread

Martha takes a basic banana bread and makes it special by adding sour cream to it. Yes, it makes it less healthy and more cake like, but it is so good!

I have made this recipe for years. It is my favorite. I have served this so many times and people always ask me for the recipe. After they make it, it quickly becomes their favorite as well.

When I have enough ripe bananas I love to double this recipe so that I have a loaf to put in the freezer for an easy breakfast or dessert.

Banana Bread

My kids get confused with banana bread. They can never figure out what it is. One time I will serve it for breakfast, then another time I will serve it with a meal, and yet another time I will serve it for dessert. Breakfast, side dish, or dessert whatever you choose it is delicious!

This recipe also works well gluten free. I now use Bob’s Red Mill’s 1 to 1 Gluten Free Blend and it works great too. It is so good no one will know it is gluten free!

A delicious banana bread and a great way to use up overripe bananas.

Ingredients
  • 1/2 cup butter room temperature
  • 1 cup sugar
  • 2 eggs
  • 1 1/2 cups flour Bob’s Red Mill 1 to 1 Gluten Free Flour Blend works well for a gf version
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup mashed bananas
  • 1/2 cup sour cream
  • 1 teaspoon vanilla
  • 1/2 cup chopped pecans or walnuts optional
Instructions
  1. Preheat oven to 350 degrees.
  2. In a mixing bowl cream butter, sugar, and eggs.

  3. In another bowl combine the dry ingredients and add to the butter mixture. Mix well.

  4. Add the bananas, sour cream, and vanilla. Stir well.
  5. Stir in the nuts if using. Pour into a well greased loaf pan.
  6. Bake for 55-60 minutes. Let cool 5 minutes then turn onto a rack to cool.
  7. Slice and enjoy!

Homemade waffles are so much better than the store bought frozen kind. Yes, I know the frozen ones in the box are easy, but homemade is almost always better. 

I think I was an adult the first time I had those famous frozen waffles. I am pretty sure it was after I was married and I found out my husband loved them. Or at the time he loved them. He now prefers my homemade ones. 

My mom bought very little packaged or processed food when I was growing up. We never had pudding from the box and we never had frozen waffles.

We had pudding and we had waffles, but it was homemade pudding and homemade waffles. 

Most kids go crazy over homemade cookies, homemade bread, and homemade breakfasts. My sisters and I went crazy for the store bought stuff because we rarely had it. Store bought desserts and breakfast foods were a treat for us. And I am glad they were. 

My mom cooked that way mainly out of necessity. It was cheaper, but I am thankful for it because it gave my sisters and I a love of real food.

It also gave us all a love for homemade food and for cooking. We know what the real stuff tastes like and we almost always prefer the homemade version. 

My sisters and I all love to cook and bake and we often exchange recipes. This waffle recipe is an example of that. My sister shared it with me years ago. It was a favorite in her family and it quickly became a favorite in ours.

One of the things that I love about this recipe is that it is easy to adapt to make it work for us. 

I used to make this with all purpose flour or with part whole wheat. I now use Bob’s Red Mill 1 to 1 gluten free flour blend to make it gluten free. 

The recipe contains oil, so it is also an easy recipe to make dairy free by using a dairy free milk. The dairy free version does not brown up quite the same, but they are still really good. I like to make a big batch of the dairy free ones to keep in the freezer for my daughter to have on hand when the rest of us are eating a dairy filled breakfast.

Can you freeze waffles? 

Yes, yes you can. Waffles freeze well and make a great make ahead breakfast. Make a big batch on the weekend and freeze them for easy breakfast during the week. 

How To Freeze Waffles

My favorite way to freeze waffles is to let them cool completely. I lay them out on a cookie sheet and put them in the freezer for an hour or two. Once they are firm I place them in zip top bags and place them in the freezer. You can take them out and reheat them for breakfast as needed.

I have two waffles irons. One is a Belgium style one that I love. I also have a basic waffle iron that I use when I am making a lot of waffles or when I am making two different versions.

Ingredients

  • 2 cups flour ( You can use part whole wheat flour or a gluten free flour blend for a gf version.)
  • 1 tablespoon baking powder
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 1 3/4 cups milk
  • 6 tablespoons of oil
  • 2 eggs

Instructions

  1. In a large bowl combine flour, baking powder, sugar, and salt. Set aside.
  2. In a separate bowl whisk together the milk, oil, and eggs until well combined.
  3. Add wet ingredients to flour mixture. Whisk until combined.
  4. Let batter sit about 5 minutes or while waffle iron heats.
  5. Cook on waffle iron as directed.

 

Replacing Gas Grill Grates

We bought a gas barbecue grill about three years ago. We have used it a lot. It is something we have really enjoyed having. We use it at least once a week, nine months of the year. By the end of last summer the grates on the grill looked like this:

Pretty bad wasn’t it. Not only did it look bad, the food really stuck to it. It was hard to flip things over because they would stick or you would get part of the coating that was coming off on your food.

We decided we really needed to do something about it in order to be ready for grilling this spring and summer. The rest of the grill is still in very good condition. We did not want to have to replace the whole grill just because the grates were bad. We checked around at several stores and discovered that our grill was an odd size so new grates were hard to find. I looked around online for them and found that they were over $100 to replace. At this point I was beginning to think we would just have to replace the grill. I decided to call the manufacture of the grill to see if they would have any advice about replacing them. I found out that through them I could get a replacement set for $50 including shipping. Plus they are now making them out of a better material so they should last longer. Now our grill looks like this:

So my frugal tip for today is check around thoroughly when needing to repair or replace an item. It was much cheaper to spend the time finding a replacement for the grill grates than it was to replace the whole grill.

Updated Molasses Cookies

On Tuesday I wrote about what happens when you do not follow a cookie recipe. Well, here is a picture of the molasses cookies when they are done according to directions.

These are a thin but chewy cookie. I think the longer you refrigerate them the better they will turn out. So I would recommend at least 4-6 hours in the refrigerator or overnight. These are one of the best tasting molasses cookies I have made. I will be making these again.

Baking Is A Science

Baking is a science. When you cook something like a casserole or soup you can change things around and still get good results. If you vary the ingredients or cooking time it may not be as good but it will still work. Baking on the other hand is like science. There is a reason there is a certain amount of baking soda to flour to liquid ratio. There is a reason you need to mix a cake for the two minutes the recipe says and there is a reason it needs to bake for forty-five minutes.

I am usually very good about following recipes. I do exactly what it says the first time I make it, then if I want to vary it the next time I do. The other day though I got in a hurry. I wanted to make some molasses cookies because they are one of my husbands favorites. I was trying a new recipe. The recipe said to refrigerate the dough for several hours or overnight. Well, I decided that that must be too long and just an hour would be enough. Bad idea! I can’t believe I didn’t believe the recipe. I know the importance of chilling a cookie dough if it says to. It really does make the texture better and helps them from spreading out. Some batters just need chilled. But several hours seemed unnecessary to me. It wasn’t, because this is what my cookies looked like.

They spread out all over the place and were very thin. Then when I took them off they did this.

Obviously they were not the prettiest cookies I’ve made. Which was too bad because they tasted wonderful. They were some of the best tasting molasses cookies I have made.

So my tip for today is follow the recipe when baking cookies, cakes, breads, etc. There is a reason it tells you to do things like chill the batter!

Jasmine Rice

I found a new way to cook rice. Well, not new but new to me. I saw a recipe on Martha Stewart where they cooked Jasmine Rice in coconut milk (not cream of coconut but coconut milk). It sounded like it would be very good. I did an Internet search to find a recipe. I found this one at 101 cookbooks. I think that one would be good but I wanted to do a version that we could have for breakfast. Something kind of along the lines of rice pudding(ish).

This recipe used 2 cups jasmine rice, 1 cup coconut milk, and 1 1/2 cups water. I did not know what I would do with the rest of the coconut milk since the can was a little over 1 1/2 cups. I decided to just put in all the coconut milk. I am glad I did. It had a very creamy texture. I left out the other ingredients that the original recipe had in it. I think it turned out great. For those of you who do not like coconut, let me say that is was not a strong coconut taste. My daughter does not like coconut but she loved the rice cooked this way. Jasmine rice has a stronger taste then plain white rice which also add some depth to the flavor. I severed it with eggs but just a bowl of this would be good. I will definitely be making this again for breakfast.

My Mother’s Day Gift

My ten year old daughter made me this for Mother’s Day.

She made this all by herself. I LOVE it. It was so sweet of her. She learned to crochet when she was eight years old. And has been making doilies ever since. She prefers to work with small threads and hooks, so doilies are something she loves to do. She made one just like this and sold it. I liked it so much she made me one. She has made a lot of doilies in the last two years. She has sold some, given several as gifts to her grandmothers and even given a few as wedding gifts. I hope to set up an Etsy Shop for her once she gets a few stockpiled. She seems to sell them as fast as she makes them.

I am so glad she had this talent. I wish I had taken the time to learn things like this when I was her age. My grandmother could craft just about anything. She crocheted, knitted, quilted, worked with dried flowers, did pottery, sewing, painting, and more. She taught me a few things like knitting and crocheting but I did not really have any interest in it. I only learned the basics. Oh, how I wish I could go back and spend hours learning all my grandmother had to teach me. I am so thankful my daughter is learning this dying art form. So few young people have an interest in learning these things.

Two years ago a lady in our church offered to teach some of the younger girls in the church how to crochet. I decided that my daughter should give it a try. I never really expected her to like it or stick it out. She took to it right away. Within a couple of months she had done her first doilie. We knew she had found a talent. She will sit and crochet for hours sometimes. It is amazing. She wants to give knitting a try next and then sewing. I think if she can tackle a project like this at age ten she will do well in any other craft project she tries.
