Easy Whole Wheat Banana Pancakes (With a Gluten Free Option)
These banana pancakes are a breakfast or breakfast for dinner that your kids are sure to love.
  • 3 cups whole wheat flour or gluten free flour blend ( I used Bob's Red Mill 1 to 1 gf blend)
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 ripe bananas, mashed
  • 2 eggs
  • 2 cups milk ( I used coconut milk)
  • ⅓ cup vegetable oil
  1. In a large bowl whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  2. In another bowl whisk together mashed bananas, eggs, milk, and oil.
  3. Add dry ingredients to wet ingredients and whisk until combined. A few lumps left are okay.
  4. Heat griddle to medium heat. Using a ladle or scoop pour batter onto griddle.
  5. Cook for 2-3 minutes or until edges appear to be cooked.
  6. Flip pancakes and cook 2-3 minutes more or until done.
  7. Remove from griddle and serve with butter and syrup.
